Gondre Rice Ingredients
  • 2 cups rice (approx. 360g)
  • 30g dried gondre namul
  • 1 Tbsp perilla oil (15ml)
  • 1 Tbsp sesame oil (15ml)
  • 250ml water (or equal amount to rice)

Gondre Namul Seasoning Sauce
  • 2 Tbsp perilla oil (30ml)
  • 1 Tbsp sesame oil (15ml)
  • 1 Tbsp cooking wine (mirin) (15ml)
  • 1 Tbsp soup soy sauce (15ml)
  • 1 Tbsp minced garlic (15g)
  • 1 Tbsp toasted sesame seeds (5g)
  • 3 Tbsp chopped green onions (30g)

Rice Mixing Sauce
  • 2 Tbsp soy sauce (30ml)
  • 1 tsp gochugaru (Korean chili flakes) (3g)
  • 1 Tbsp sesame oil (15ml)
  • 1/2 Tbsp perilla oil (7.5ml)
  • 5 Tbsp finely chopped scallions (50g)
  • 1 Tbsp toasted sesame seeds (5g)

Cooking Instructions

Step 1

First, soak the dried gondre namul (30g) in cold water until softened (about 30 minutes to 1 hour). Rinse the 2 cups of rice and let it soak for about 30 minutes.

Step 2

Boil the soaked gondre namul in water for about 5-10 minutes. After boiling, rinse the gondre namul under cold water multiple times to remove any bitterness and impurities. Squeeze out excess water thoroughly.

Step 3

While the gondre namul is boiling and the rice is soaking, prepare the seasoning sauce for the gondre namul. Combine all ingredients: 2 Tbsp perilla oil, 1 Tbsp sesame oil, 1 Tbsp cooking wine, 1 Tbsp soup soy sauce, 1 Tbsp minced garlic, 1 Tbsp toasted sesame seeds, and 3 Tbsp chopped green onions. Separately, mix the ingredients for the rice mixing sauce: 2 Tbsp soy sauce, 1 tsp gochugaru, 1 Tbsp sesame oil, 1/2 Tbsp perilla oil, 5 Tbsp finely chopped scallions, and 1 Tbsp toasted sesame seeds.

Step 4

Squeeze the gondre namul dry and chop it into bite-sized pieces (about 2-3 cm). Add the prepared gondre namul seasoning sauce to the chopped gondre and gently mix it by hand. Ensure the seasoning is evenly distributed.

Step 5

In a pot or rice cooker, heat 1 Tbsp perilla oil and 1 Tbsp sesame oil. Add the seasoned gondre namul and sauté for about 2-3 minutes until the moisture has evaporated and a nutty aroma is released. Then, add the soaked rice and stir-fry for another 1-2 minutes until the rice grains become slightly translucent.

Step 6

Pour 250ml of water (or an amount equal to the rice) over the well-stirred rice and gondre namul. Ensure the water level is slightly above the rice. Cover the pot with a lid to cook the rice.

Step 7

Start cooking on high heat. Once the water begins to boil (when steam starts to escape), immediately reduce the heat to low and simmer for 10 more minutes. Turn off the heat and let it steam for about 10 minutes to allow the rice to cook through evenly.

Step 8

Serve the steaming hot gondre namul rice in bowls, accompanied by the prepared rice mixing sauce. Mix and enjoy with the sauce according to your preference. Savor the fragrant flavor of gondre!
