  • 1 tsp salt (for blanching)

Miso & Gochujang Dressing

  • 2/3 Tbsp savory miso paste
  • 1/2 Tbsp gochujang (Korean chili paste)
  • 1/2 tsp plum extract (maesilcheong)
  • 1 Tbsp perilla oil (deulgireum)
  • 1/2 tsp minced garlic
  • 1/2 tsp sesame seeds (for garnish)

Begin by inspecting your amaranth greens. Trim off any overly thick or tough stems, focusing on the tender leaves for the best texture. Ensure they are clean and ready for preparation.

Bring a pot of water to a boil and add 1 tsp of salt. Gently blanch the cleaned amaranth greens for about 2 minutes. Be careful not to overcook them, as they can become mushy. The blanching time can be adjusted based on the freshness and thickness of the greens.

Once blanched, immediately rinse the amaranth greens under cold running water to stop the cooking process. After they have cooled, gently gather the greens in your hands and squeeze out as much excess water as possible. Thoroughly draining is key to preventing a watery salad.

Now, let’s prepare the delicious dressing. In a small bowl, combine the savory miso paste, gochujang, plum extract, minced garlic, and perilla oil.
