Main Ingredients- 300g fresh amaranth greens
- 1 tsp salt (for blanching)
Miso & Gochujang Dressing- 2/3 Tbsp savory miso paste
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 tsp plum extract (maesilcheong)
- 1 Tbsp perilla oil (deulgireum)
- 1/2 tsp minced garlic
- 1/2 tsp sesame seeds (for garnish)
- 2/3 Tbsp savory miso paste
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 tsp plum extract (maesilcheong)
- 1 Tbsp perilla oil (deulgireum)
- 1/2 tsp minced garlic
- 1/2 tsp sesame seeds (for garnish)
Cooking Instructions
Step 1
Begin by inspecting your amaranth greens. Trim off any overly thick or tough stems, focusing on the tender leaves for the best texture. Ensure they are clean and ready for preparation.

Bring a pot of water to a boil and add 1 tsp of salt. Gently blanch the cleaned amaranth greens for about 2 minutes. Be careful not to overcook them, as they can become mushy. The blanching time can be adjusted based on the freshness and thickness of the greens.
