Base Ingredients

  • 1 piece of dried kelp (Kombu) (approx. 5x5cm)
  • 1 stalk of green onion (white part mainly)
  • 1/4 onion

Seasoning Ingredients

  • 1 cup (200ml) regular soy sauce (Jinganjang)
  • 1/2 cup (100ml) mirin or cooking sake
  • 1/2 cup (100ml) water
  • 1 Tbsp whole black peppercorns

Cooking Instructions

Step 1

First, prepare all the ingredients you’ll need. Measure out 1 cup of soy sauce, 1/2 cup of mirin (or cooking sake), and 1/2 cup of water. Gently wipe the dried kelp with a paper towel. Cut the white part of the green onion into large pieces. Peel and thinly slice the onion.

Combine the soy sauce, mirin, water, whole peppercorns, dried kelp, large pieces of green onion, and sliced onion in a pot. Bringing all these ingredients together to simmer will allow their flavors to meld beautifully into the soy sauce, creating a deeper taste.

Place the pot over high heat. Once it comes to a boil, continue to simmer for about 10 minutes. You’ll notice a wonderful aroma released from the ingredients as it cooks. After 10 minutes, turn off the heat. Use a sieve or strainer to separate the liquid soy sauce from the solids (kelp, green onion, onion, peppercorns). Pour the strained, clear soy sauce into an airtight container and store it in the refrigerator. This delicious homemade savory soy sauce is now ready to use!
