Aged cabbage that’s been frozen is incredibly useful! Today, we’ll quickly whip up a delicious miso soup using the frozen aged cabbage I had on hand. The savory miso broth combined with crisp aged cabbage and soft tofu makes for a satisfying and delicious meal.

Main Ingredients

  • 2 handfuls blanched aged cabbage (water squeezed out and chopped into bite-sized pieces)
  • 1/2 block tofu

Seasoning

  • 1 Tbsp homemade doenjang (Korean soybean paste)
  • 1/2 Tbsp guk-ganjang (soup soy sauce)
  • 1/3 Tbsp fish sauce
  • 1 pinch salt
  • 1/3 Tbsp minced garlic

Cooking Instructions

Step 1

First, take the blanched aged cabbage, squeeze out any excess water, and chop it into bite-sized pieces, about 3-4 cm long. In a bowl, combine the chopped aged cabbage with 1 Tbsp of homemade doenjang and 1/3 Tbsp of minced garlic. Gently mix and marinate the cabbage. Marinating beforehand will deepen the flavor of the miso soup.

In a pot, add enough water to make your soup and bring it to a rolling boil with 2 dashima coins (or a dried anchovy and kelp sachet). Once the broth is boiling, remove the dashima coins. Add the marinated aged cabbage to the pot and let it simmer for a bit.

Once the aged cabbage has softened slightly, add the tofu cut into cubes. Adding the tofu towards the end helps it maintain its shape and prevents it from breaking apart.

After adding the tofu, continue to boil the soup until it reaches a rolling boil again. This step allows the tofu to absorb the soup’s flavors, making it even more delicious.

When the soup is boiling and the tofu starts to float to the surface, it’s time to adjust the seasoning. First, add 1/2 Tbsp of guk-ganjang and 1/3 Tbsp of fish sauce to enhance the umami flavor. Finally, taste the soup and add 1 pinch of salt if needed. If you prefer a lighter taste, you can adjust the amount of fish sauce or guk-ganjang, or add a little more salt to suit your preference. Enjoy your delicious finished miso soup!
