I always enjoyed eating delicious sautéed sea mustard stems at restaurants, and when I started making it as a side dish after getting married, I found it surprisingly simple and tasty! Here’s an easy side dish recipe for sea mustard stems that even beginners can master. ^^

Main Ingredients
  • 200g Salted Sea Mustard Stems (Rinse under cold running water 2-3 times to remove excess salt)
  • 1/2 Onion (Thinly sliced)
  • A small piece of Carrot (Thinly sliced)
  • 1/2 cup Soju (For blanching to remove fishy odor)

Seasoning
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Soy Sauce for Soup (Adds umami)
  • 1 Tbsp Cooking Wine (Mirin) (Removes odor and enhances flavor)
  • Approx. 2 Tbsp Cooking Oil
  • 1 Tbsp Sesame Oil (For a nutty aroma)
  • A pinch of Toasted Sesame Seeds (For garnish)
  • Salt to taste (Add gradually to adjust seasoning)

Cooking Instructions

Step 1

First, rinse the salted sea mustard stems under cold running water 2-3 times to remove the salt. Drain them well using a sieve. Bring a pot of water to a boil, then add half a cup of soju. Once the water is boiling again, add the sea mustard stems and blanch for just 30 seconds. This step effectively removes any fishy odor and improves the texture. After blanching, rinse the stems under cold water and squeeze out any excess moisture.

Step 2

Thinly slice the onion and the carrot. Prepare your seasoning ingredients by measuring out the minced garlic, soy sauce, cooking wine, sesame oil, sesame seeds, and salt. Having them ready will make the cooking process much smoother.

Step 3

Now, let’s start stir-frying! Heat about 2 tablespoons of cooking oil in a frying pan over medium heat. Add the minced garlic, sliced onion, and carrot, and sauté until the onions become translucent and fragrant. Once the onions are softened, add the prepared sea mustard stems. It’s essential to cut the stems into bite-sized pieces with scissors while they are in the pan. This helps the seasoning distribute evenly and improves the texture. Add 2 tablespoons of soy sauce for soup and 1 tablespoon of cooking wine. Stir-fry over high heat for about 1-2 minutes until everything is well combined and coated with the sauce.

Step 4

Just before turning off the heat, drizzle in 1 tablespoon of sesame oil for a rich, nutty aroma, and sprinkle with toasted sesame seeds for garnish. Taste the dish and add a little salt if needed to adjust the seasoning to your preference. Your delicious sautéed sea mustard stems are now complete! This dish is wonderfully savory and satisfying, especially served over a bowl of warm rice.
