Sautéed King Oyster Mushrooms and Round Zucchini
A Delicious Sauté of King Oyster Mushrooms and Round Zucchini!
It’s the season for delicious round zucchini (also known as Korean squash)! We’ve made a simple sauté with king oyster mushrooms. This dish is a perfect side that brings out the best flavor of seasonal zucchini.
Main Ingredients- 1/2 Round zucchini
- 1 Large king oyster mushroom
- 1 Cheongyang chili pepper
- 1/2 Green onion
Seasoning- 1 tsp Minced garlic
- 1.5 Tbsp Olive oil
- 1 tsp Salted shrimp (or 2-3 pinches of salt)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 1 tsp Minced garlic

Cooking Instructions
Step 1
First, wash the round zucchini thoroughly. Then, use a small spoon to carefully scoop out and discard the seeds from the center of the zucchini. This step enhances the texture.
Step 2
Cut the deseeded round zucchini into bite-sized pieces. Slicing them not too thinly will help them hold their shape without becoming mushy during cooking.
Step 3
Prepare one large king oyster mushroom and slice it into pieces similar in size to the zucchini. The chewy texture of the mushrooms will beautifully complement the zucchini.
Step 4
Heat a pan over medium heat and add 1.5 tablespoons of olive oil. Add the finely chopped green onion and 1 teaspoon of minced garlic. Sauté for about 10-20 seconds until fragrant, creating an aromatic oil base.
Step 5
Add the sliced round zucchini to the aromatic oil. Stir-fry for 1-2 minutes, tossing gently, until the zucchini just begins to soften. Be careful not to overcook them until they become watery.
Step 6
Now, add the sliced king oyster mushrooms and the finely chopped Cheongyang chili pepper to the pan. The chili pepper will add a touch of heat and a wonderful aroma.
Step 7
It’s time to season. Add 1 teaspoon of salted shrimp for a savory depth of flavor. If you don’t have salted shrimp, use 2-3 pinches of salt. Stir-fry over high heat for about 2-3 minutes, ensuring all ingredients are well combined and cooked.
Step 8
Just before turning off the heat, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds for extra nuttiness. Immediately transfer the sautéed zucchini mixture to a serving plate to maintain its firm texture. Enjoy your delicious homemade side dish!
