Sauteed Kimchi Stew with Saury: Quick & Flavorful, No Chopping Needed!
Super Easy Saury Kimchi Stew (Jjigae) – No Cutting Board or Knife Required!
I made a super simple Saury Kimchi Stew using aged, sour kimchi, without needing to chop anything! It’s richer than kimchi jjigae and has a bit more broth than kimchi jjim, making it perfect for mixing with rice. Shall we cook this delightful Saury Kimchi Stew together?
Main Ingredients- Canned Saury (Pacific Saury) 400g
- Well-fermented Sour Kimchi 500g
- Water 400ml
- Dashi Pack (Kelp and Dried Anchovy base) 1 pack
- Kimchi Broth 1/2 cup (100ml)
Seasoning (using a rice spoon for measurement)- Minced Garlic 1 Tbsp
- Sugar 1 Tbsp
- Black Pepper (a pinch)

Cooking Instructions
Step 1
Open the canned saury beforehand and let it sit. This helps to release any volatile compounds and the oil from the can, resulting in a cleaner, less fishy flavor.
Step 2
Using scissors or your hands, tear or cut the sour kimchi into bite-sized pieces (about 3-4 cm). Mix the cut kimchi with 1 Tbsp of sugar. This step helps to balance the sourness of the kimchi and enhance its savory flavor.
Step 3
Pour 400ml of water into a pot and add the dashi pack. Bring to a boil over high heat, then reduce to medium heat and simmer for 10 minutes to create a flavorful broth. Remove and discard the dashi pack.
Step 4
Add the prepared kimchi, 100ml of kimchi broth, and the canned saury (including its liquid) to the broth in the pot. Bring to a rolling boil over high heat. Skim off any foam that rises to the surface for a cleaner taste. Then, cover the pot, reduce the heat to medium-low, and simmer for 20 minutes. This slow simmering allows the flavors of the saury and kimchi to meld beautifully.
Step 5
This is the final step. Uncover the pot and stir in 1 Tbsp of minced garlic and a pinch of black pepper. Bring to a vigorous boil over high heat until the seasonings are well combined. Your delicious Saury Kimchi Stew is ready! If you enjoy a spicier kick, feel free to finely chop 1-2 Cheongyang chili peppers and add them to your preference.
