Main Ingredients- 3 potatoes
- 1/2 green onion (scallion)
- 1/3 carrot
- 1/2 onion
- 2 Korean green chili peppers (optional, adjust to spice preference)
- 50g cocktail sausages (or your favorite type)
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and cut them into thin strips (julienne). Soak the potato strips in cold water for about 10 minutes to remove excess starch; this prevents them from sticking together and results in a crispier texture. Julienne the carrot and slice the green onion into similar thickness strips. Cut the cocktail sausages diagonally and finely mince the Korean green chili peppers. (Add the chili peppers if you prefer a spicy kick).
Step 2
Heat a generous amount of cooking oil in a frying pan over medium heat. Add the drained potato strips and stir-fry. Cook until the potatoes become translucent and their edges start to turn lightly golden brown. Be sure to stir the potatoes occasionally to prevent them from burning.
Step 3
When the potatoes are about 70-80% cooked, add the prepared sausages to the pan and continue stir-frying. Season with herb salt (or regular salt) at this stage. The sausages will brown nicely, adding their savory flavor to the potatoes. A pinch of black pepper can also be added here.
Step 4
Now, add the julienned carrot, sliced green onion, and minced chili peppers to the pan. Stir-fry until the vegetables are slightly tender. Add 1 tablespoon of oyster sauce to enhance the umami flavor. Continue to stir-fry for another 1-2 minutes until all ingredients are well combined. Turn off the heat, garnish generously with sesame seeds, and your delicious Sausage and Potato Stir-fry is ready! Serve hot for the best taste.
