Main Ingredients- 100g Vienna sausages
- 100g Glass noodles
- 1/2 large onion
- A little bit of green onion
Cooking Instructions
Step 1
Although the glass noodles will be boiled directly, soak them in water for about 10 minutes beforehand to slightly reduce the boiling time. (for 100g dried glass noodles)
Step 2
Make 2-3 shallow cuts on the Vienna sausages. This prevents them from bursting when cooked and allows the seasoning to penetrate better. Diagonal or cross-shaped cuts also enhance presentation.
Step 3
Julienne the onion and slice the green onion diagonally. If you have other vegetables like mushrooms, feel free to add them, but today we’ll keep it simple with minimal ingredients for a clean taste.
Step 4
Boil the soaked glass noodles in plenty of water according to the package instructions. Once cooked, drain them and rinse under cold water to prevent sticking and maintain a chewy texture.
Step 5
Heat a generous amount of cooking oil in a pan over medium heat. Add the julienned onion and stir-fry until translucent and lightly browned. Caramelizing the onions brings out their natural sweetness and enhances the dish’s flavor.
Step 6
Once the onions are softened, add the scored Vienna sausages and stir-fry together. When the cuts on the sausages begin to open up slightly, add a generous amount of sliced green onions. The beauty of this dish is its flexibility – feel free to adjust ingredients based on what you have!
Step 7
In a separate bowl, place the boiled glass noodles. Pre-season the noodles by mixing them with the basic sauce. Similar to preparing japchae, seasoning the noodles beforehand ensures even flavor distribution. Add 3 Tbsp soy sauce, 2 Tbsp sugar, and 2 Tbsp perilla oil, then gently mix.
Step 8
Eating the noodles seasoned this way alone can evoke nostalgic flavors, much like simple noodles mixed with soy sauce from childhood. It’s also a great snack for kids!
Step 9
When the sausages are nicely browned and the cuts are slightly open, turn off the heat. Be careful not to overcook, as sausages can become tough.
Step 10
With the heat off, add the pre-seasoned glass noodles to the pan. Sprinkle generously with black pepper to remove any unwanted odors and add an extra layer of flavor.
Step 11
Taste and adjust seasoning as needed. Add more soy sauce if it’s too bland, or a little more perilla oil for added richness. Finish with a sprinkle of sesame seeds for a visually appealing presentation.
Step 12
Now, place the pan over low heat and gently stir-fry everything together until well combined. The combination of sausage and glass noodles is surprisingly delightful, almost like a simplified japchae. Enjoy your delicious meal with this simple ‘Ssodang Stir-fry’!
