Main Ingredients
- 1 medium eggplant
- 1 sausage
- 2 Tbsp all-purpose flour
- 1 egg

Cooking Instructions
Step 1
First, crack 1 fresh egg into a bowl. Add 1/4 tsp of salt and whisk until the yolk and white are well combined. Set aside.

Wash and pat dry 1 eggplant. Carefully make lengthwise slits in the center of the eggplant, leaving the ends intact, creating pockets for the sausage. Sprinkle 1/4 tsp of salt evenly over the cut surfaces to draw out moisture and tenderize the eggplant. Let it sit for a few minutes.

Prepare the sausage for the filling. Slice 1 sausage into thin, flat pieces, about 0.5 cm thick, to fit snugly into the eggplant slits. Flattening the sausage helps it cook evenly and fit better.
