Main Ingredients
  • 2 medium potatoes

Seasoning & Topping
  • 2 Tbsp melted butter
  • 2 Tbsp oligosaccharide (or honey)
  • 1/2 tsp salt
  • Dried parsley, to taste

Cooking Instructions

Step 1

Start by thoroughly washing the potatoes. You can leave the skin on for extra flavor and texture. Place a potato on a cutting board. Carefully make thin, deep slices across the potato, going almost all the way through but not cutting it completely apart. Aim for slices about 2-3mm apart to create the accordion effect. If you find this tricky, a helpful tip is to place chopsticks on either side of the potato as a guide; they will prevent your knife from cutting all the way through, making it safer and easier to achieve even slices.

Step 2

In a small bowl, whisk together the melted butter, oligosaccharide (or honey), and salt to create a delicious salty-sweet sauce. Generously brush or spoon this sauce in between each slice of the potato, ensuring it gets into all the crevices. For an extra touch, sprinkle dried parsley over the top as desired. Parsley adds a lovely aroma and visual appeal.

Step 3

Preheat your air fryer to 190°C (375°F). Place the prepared potatoes in the air fryer basket. Cook for approximately 20-25 minutes. Cooking times may vary slightly depending on your air fryer model and the size of the potatoes. Keep an eye on them, and continue cooking until the potatoes are golden brown and the edges are wonderfully crispy. The goal is for the inside to be tender and fully cooked.

Step 4

Serve immediately while warm for the best experience! Enjoy your delightfully crispy and tender accordion potatoes with their irresistible salty-sweet glaze. They are also delicious served with a side of ketchup or sour cream if you like.
