Ingredients
  • 400g chicken gizzards
  • Salt
  • Black pepper
  • 1/2 onion
  • 5 Korean green chili peppers
  • 5 cloves garlic
  • 1 stalk green onion (scallion)
  • Cooking oil

Cooking Instructions

Step 1

Prepare the chicken gizzards. Rinse them thoroughly 2-3 times under cold running water. Carefully trim away any tough membranes or excess fat.

Step 2

Cut the cleaned gizzards into bite-sized pieces, about three pieces per gizzard.

Step 3

Bring a pot of water to a boil. Add 1 tablespoon of salt to the boiling water.

Step 4

Once the water is boiling, add the prepared gizzards. You can also add 1-2 tablespoons of soju or mirin to help tenderize the gizzards and reduce any gamey odor. Boil vigorously for about 5-7 minutes. Be careful not to overcook, as they can become tough.

While the gizzards are boiling, prepare the vegetables. Slice the onion thinly, chop the Korean green chili peppers (you can remove the seeds for less heat), mince or thinly slice the garlic cloves, and diagonally slice the green onion.

Heat a frying pan over medium heat and add cooking oil. Sauté the minced garlic and sliced green onion first until fragrant.

Once the aroma of garlic and green onion is released, add the sliced onion and green chili peppers. Increase the heat to medium-high and stir-fry quickly (‘sha-sha-sha’) until the onions are slightly softened and translucent. This quick stir-fry helps maintain the crispness of the vegetables.

Add the boiled gizzards to the pan. Season with salt and black pepper to taste. Remember that the gizzards have already been seasoned during boiling, and the vegetables will release some moisture and flavor, so adjust the salt accordingly. Stir-fry over medium-high heat for a few minutes until everything is well combined and heated through.
