  • 1kg fresh shrimp (medium to large size, about 10cm body length, recommend tiger prawns or similar)
  • 2 cups coarse sea salt (kosher salt or coarse sea salt recommended)

First, to maintain the shrimp’s peak freshness, carefully snip off the long antennae near the head and the small tail fin that can squirt water. If the long whiskers bother you, you can also trim those with scissors for a more comfortable eating experience.

After preparing the shrimp, give them a quick rinse under cool running water. Avoid washing them for too long, as this can wash away their delicious natural juices. Once rinsed, place the shrimp on a colander to drain thoroughly. Removing excess moisture is key to achieving a crispy texture.

Now, let’s prepare the pan for baking. Use a frying pan with a lid and line the entire bottom with parchment paper or aluminum foil. Spread the 2 cups of coarse salt evenly and generously over the paper, ensuring no metal is exposed. The salt creates a perfect environment for baking, locking in moisture and flavor.

Arrange the drained shrimp on top of the bed of coarse salt. Make sure to leave some space between each shrimp so they cook evenly and don’t steam. This arrangement allows for optimal heat distribution.

Cover the pan with the lid and cook over medium heat. You’ll know they’re cooking beautifully when you hear a gentle ‘crackling’ sound of the salt heating up. Continue cooking for about 10 to 12 minutes, depending on the size of your shrimp. Once cooked, let them rest for a moment with the lid slightly ajar to release steam before serving.
