Salmon- 250g salmon fillet
Salmon Marinade- Pinch of dried basil
- 1 tablespoon olive oil
- Pinch of salt
- Pinch of black pepper
Fresh Tomato Sauce- 1 ripe tomato
- 1/4 small onion, finely chopped
- 1/2 tablespoon minced garlic
- Pinch of salt
- Pinch of black pepper
- Pinch of dried basil
- 1 tablespoon olive oil
- Pinch of salt
- Pinch of black pepper
Fresh Tomato Sauce- 1 ripe tomato
- 1/4 small onion, finely chopped
- 1/2 tablespoon minced garlic
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
Prepare the salmon by drizzling it with 1 tablespoon of olive oil. Sprinkle with dried basil, salt, and pepper. Gently massage these ingredients into the salmon fillet to coat it evenly. Let it marinate for 10 minutes to allow the flavors to meld.
Step 2
To prepare the fresh tomato, make a small ‘X’ cut at the bottom of the tomato with a knife. Immerse the tomato in boiling water for about 1 minute, just until the skin starts to loosen. This blanching step makes peeling much easier.
Step 3
Immediately transfer the blanched tomato to a bowl of ice water to stop the cooking process and cool it down. Once cooled, easily peel off the skin, starting from the ‘X’ cut. Remove the seeds and finely dice the tomato flesh. This will form the base of our vibrant sauce.
Step 4
Heat a skillet over medium heat and add a little olive oil. Carefully place the marinated salmon fillet into the hot pan. Sear for about 3-4 minutes per side, or until it’s golden brown and cooked to your desired doneness. Aim for a nice sear on the outside while keeping the inside moist and flaky.
Step 5
In a separate pan, heat a small amount of olive oil over medium-low heat. Add the finely chopped garlic and onion. Sauté gently until they become fragrant and translucent, taking care not to burn them. This step builds a wonderful aromatic foundation for the sauce.
Step 6
Once the garlic and onion are softened and aromatic, add the diced fresh tomato to the pan. Cook, stirring occasionally, until the tomatoes begin to break down and the sauce starts to thicken slightly. Season with salt and pepper to taste, adjusting as needed. This creates a wonderfully fresh and light tomato sauce.
Step 7
To serve, place the perfectly seared salmon fillet onto a serving plate. Generously spoon the warm, fresh tomato sauce over the top of the salmon. This delightful combination of tender salmon and bright, zesty tomato sauce makes for a beautifully balanced and delicious meal.
