A magnificent one-bowl meal made with Chamdream rice, a premium Korean rice variety! Inspired by a dish my husband once made with crab sticks, I’ve recreated it with fresh salmon and a medley of seafood. The chewy and soft Chamdream rice pairs perfectly with the other ingredients, creating a harmonious blend of flavors and textures. Topping it off with a golden egg yolk and mixing it all together releases a rich, nutty aroma enhanced by the fresh scent of perilla leaves. It’s also delicious served with a side of refreshing chilled cucumber soup.
Ingredients- Fresh Salmon Sashimi, 100g
- Whiteleg Shrimp, 20 pcs
- Cooked Abalone, 4 pcs
- Cooked Whelk, 5 pcs
- Cooked Octopus, appropriate amount
- Fresh Perilla Leaves, 6 leaves
- Scallions (Green Onions), 4 stalks
- Onion, appropriate amount
- Carrot, appropriate amount
- Green Chili Pepper, 1 pc
- Red Chili Pepper, 1 pc
- Fresh Egg, 1
- Sprout Greens, for garnish
Seasoning- Sashimi Soy Sauce or Soy Sauce, 3 Tbsp
- Tuna Extract (or Fish Sauce), 1.5 Tbsp
- Gochugaru (Korean Chili Flakes), 1/2 Tbsp
- Minced Garlic, 1 Tbsp
- Ginger-Plum Wine (or Rice Wine with Ginger)
- Sesame Oil, 1/2 Tbsp
- Toasted Sesame Seeds, 1/2 Tbsp
- Wasabi, to taste
- Sashimi Soy Sauce or Soy Sauce, 3 Tbsp
- Tuna Extract (or Fish Sauce), 1.5 Tbsp
- Gochugaru (Korean Chili Flakes), 1/2 Tbsp

Cooking Instructions
Step 1
Start by preparing the ‘Chamdream Rice,’ a premium Korean rice variety known for its excellent taste and aroma. This special rice is grown in clean water and fertile land, promising a delicious meal.
Step 2
Observe the beautiful sheen and the healthy appearance of the Chamdream rice grains. It looks promising for a fantastic bowl of rice.
Step 3
Cook the rice as you normally would, but add a piece of dried kelp (dashima) to the water. This enhances the rice’s flavor and aroma.
Step 4
Lightly blanch the shrimp in boiling water just until they turn pink. Be careful not to overcook, as they can become tough. Drain the blanched shrimp thoroughly in a sieve.
Step 5
Cut the fresh salmon sashimi into bite-sized, rustic pieces. Set aside 10 of the blanched shrimp whole for presentation. Then, roughly chop the remaining shrimp, cooked abalone, cooked whelk, and cooked octopus into pieces similar in size to the salmon.

Thinly slice the fresh perilla leaves into fine shreds. Halve the red and green chili peppers, remove the seeds, and finely mince them. Finely mince the carrot and onion. Slice the scallions into small rounds.

In a large mixing bowl, combine the salmon sashimi, chopped abalone, whelk, octopus, and the whole blanched shrimp.
Step 8
Add all the prepared vegetables (minced carrot, onion, chili peppers, and sliced scallions) to the bowl, reserving the sliced perilla leaves for later.

Now, prepare the seasoning. Add the sashimi soy sauce (or regular soy sauce), tuna extract, gochugaru, minced garlic, ginger-plum wine, toasted sesame seeds, and sesame oil to the bowl. Add wasabi according to your preference – a bit more can add a nice kick!

Gently mix all the ingredients and seasoning together with a spoon or spatula until everything is well combined. Be careful not to mash the ingredients; a gentle toss is best.

Carefully crack an egg, separate the yolk from the white, and gently place the golden yolk on top of the prepared ingredients. The yolk will enrich the flavors when mixed in.
