Main Ingredients- 6 slices fresh salmon, cut thickly
- 2 large eggs
- 2 strips pickled radish (danmuji)
- 1 ripe avocado
- 2 sheets of sushi nori (seaweed)
- 1 bowl cooked rice (approx. 200g)

Step 1
Start with perfectly seasoned sushi rice! In a bowl of warm cooked rice, combine the rice vinegar, sugar, and salt. Gently mix with a rice paddle, being careful not to mash the rice grains. Mix until the seasoning is evenly distributed. Mixing while the rice is warm helps the flavors meld beautifully.
Step 2
Prepare your fillings. For the egg, make a thin omelet, let it cool slightly, then cut it in half lengthwise to create long strips. Slice the fresh salmon into thick pieces, about 0.8-1cm thick. Cut the ripe avocado lengthwise into similar sized pieces, removing the peel and pit. Have your 2 strips of pickled radish ready.
Step 3
Time to roll! Place a sheet of nori, shiny side down, on a bamboo sushi mat. Spread about half a bowl of the seasoned sushi rice thinly and evenly over the nori, leaving a small border at the top edge. Avoid spreading the rice too thickly, as it can overpower the other ingredients and make rolling difficult. Arrange the egg strips, salmon, avocado, and pickled radish horizontally across the rice. Carefully lift the edge of the mat and roll the sushi tightly, tucking in the fillings as you go. Ensure the roll is firm to prevent it from falling apart.
