Essential Ingredients

  • Pork (neck or shoulder cut) 300g
  • 1/2 Onion
  • 1/2 Green onion (scallion)
  • 2 Cheongyang peppers (Korean red chilies)
  • 1 Tbsp Sugar
  • 1 Tbsp Soy sauce
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 170ml Pear juice drink (sweetened)
  • 1 Tbsp Minced garlic
  • 1 Tbsp Vinegar
  • 1 Tbsp Sesame oil
  • Pinch of Black pepper

Cooking Instructions

Step 1

First, prepare the vegetables. Remove the stems from the Cheongyang peppers and finely chop them. Slice the green onions diagonally. Slice the onion into strips.

Step 1

Step 2

Prepare the minced garlic by pressing it with the flat side of your knife or chopping it finely. Use paper towels to thoroughly pat and remove any excess blood from the pork. This step is crucial for a cleaner taste and better absorption of the marinade.

Step 2

Step 3

In a large bowl, pour in the pear juice drink (170ml). Add sugar (1 Tbsp), soy sauce (1 Tbsp), Gochujang (1.5 Tbsp), minced garlic (1 Tbsp), and the drained pork. Mix everything well with your hands, ensuring the pork is evenly coated with the marinade. Finally, add vinegar (1 Tbsp) and sesame oil (1 Tbsp) for gloss and aroma. Ryu Soo-young’s pro tip: Marinate the pork as described, place it in an airtight container, add the prepared vegetables on top, sprinkle a little salt, and refrigerate. This method allows the ingredients to meld and can extend the deliciousness.

Step 3

Step 4

Heat a frying pan over high heat. Add the marinated pork without stirring and let it sear until the surface is nicely browned. This helps to lock in the juices, keeping the pork moist. Once the pork is browned, add the prepared vegetables. Cover the pan and cook for about 3 minutes more, allowing the vegetables to soften and combine with the pork.

Step 4

Step 5

Add black pepper to taste. You can add more minced garlic at this stage if desired, but if you added enough during marination, it can be omitted.

Step 5

Step 6

Transfer the finished Jeyuk Bokkeum to a serving dish. Sprinkle with toasted sesame seeds for a final garnish.

Step 6

Step 7

Serve this glossy and delicious Jeyuk Bokkeum alongside rice and fresh lettuce wraps for a satisfying and complete meal.
