Main Ingredients
  • 600g Pork bulgogi cut (cut into bite-sized pieces)
  • 1/2 Onion (thinly sliced)
  • 1/2 Scallion (finely chopped)
  • 1 Bowl of Rice (warm)
  • 1 handful of Roasted Seaweed Flakes (Gim)
  • 2 Tbsp Cooking Oil

Spicy Pork Marinade
  • 200ml Pear Juice
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 2 Pinches Salt
  • 2 Tbsp Sugar
  • 3 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Vinegar

Cooking Instructions

Step 1

First, cut the pork bulgogi into bite-sized pieces. Ensure they are not too large, as this will make them easier to cook evenly.

Step 2

Peel and wash the onion, then thinly slice it into strips. Slicing the onion finely will help it absorb the flavors better.

Step 3

In a bowl, combine all the marinade ingredients: pear juice, minced garlic, sesame oil, salt, sugar, gochujang, soy sauce, and vinegar. Whisk them together thoroughly to create the marinade. The pear juice will tenderize the pork and add sweetness and depth.

Step 4

Add the sliced pork to the marinade and gently mix with your hands, ensuring each piece is evenly coated. Massaging the marinade into the pork helps it penetrate deeper.

Step 5

Add the thinly sliced onions to the pork mixture and gently toss to combine. The onions will release moisture, keeping the pork tender as it cooks.

Step 6

Transfer the marinated pork and onions to an airtight container or a resealable bag. Refrigerate for at least half a day (or overnight) to allow the flavors to meld and deepen. This marinating step is crucial for tenderness and flavor. If short on time, marinate for at least 1 hour.

Step 7

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the marinated pork (including the marinade) and break it apart with chopsticks or a spatula as it cooks. Stir-fry until the pork is cooked through and slightly caramelized. Be careful not to burn the marinade.

Step 8

Once the pork is cooked, add 1 bowl of warm rice to the pan. Stir and mix well with the pork and marinade, ensuring the rice is evenly coated and heated through. Keep stirring to prevent the rice from sticking.

Step 9

Add a handful of roasted seaweed flakes (gim) to the rice and stir-fry, allowing the flakes to distribute evenly over the rice. This adds a wonderful savory flavor and texture. Reduce heat to low to finish cooking.

Step 10

Serve the spicy pork stir-fry fried rice in a bowl. Sprinkle generously with 1 tablespoon of toasted sesame seeds and a pinch of whole sesame seeds for garnish. Enjoy your delicious homemade fried rice!
