Essential Ingredients- 8 Oreos (cream removed)
- 30g melted unsalted butter
- 200g cream cheese (softened)
- 80g sugar
- 50g plain yogurt
- 200g heavy cream (unwhipped)
- 100g strawberry puree
- 10 fresh strawberries
- 7g sheet gelatin
Cooking Instructions
Step 1
First, separate the cream from the Oreo cookies. Place the cookies in a plastic bag or a food processor and crush them into fine crumbs. Add the melted unsalted butter and mix well with a spoon or spatula until the crumbs are moistened, forming the cookie base.
Step 2
Pour the cookie mixture into your chosen cake pan. Press it down firmly and evenly on the bottom using the back of a spoon or your hand to create a solid crust. Place the pan in the refrigerator to chill and set for at least 30 minutes.
Step 3
Wash the fresh strawberries thoroughly and remove the stems. Dice them into small, approximately 1cm pieces. These strawberry bits will add texture and bursts of flavor within the cheesecake filling.
Step 4
Prepare a bowl with cold water. Soak the gelatin sheets one by one in the cold water for about 5-7 minutes, or until they become soft and pliable. This step is crucial for ensuring the gelatin dissolves smoothly.

In a separate bowl, place the softened cream cheese. Use a whisk or an electric mixer to beat it until it’s smooth and lump-free. Add the sugar and mix until well combined and the sugar has dissolved.

Add the plain yogurt, prepared strawberry puree, and the unwhipped heavy cream to the cream cheese mixture. Gently mix everything together until well combined and the batter is smooth.

Carefully remove the softened gelatin sheets from the cold water, gently squeezing out any excess water. Place the squeezed gelatin in a small microwave-safe bowl with 2 tablespoons of water. Microwave for about 30-40 seconds, or until the gelatin is completely dissolved. Be careful not to overheat or boil it.
Step 8
Pour the melted gelatin mixture into the cream cheese batter. Whisk quickly and thoroughly to ensure the gelatin is evenly distributed throughout the mixture. The batter will start to thicken as the gelatin incorporates.
Step 9
Carefully pour the thickened cream cheese mixture over the chilled cookie crust in the pan. Evenly distribute the diced fresh strawberries on top of the filling before it starts to set. Refrigerate for at least 2 hours, or until the cheesecake is firm and fully set.
Step 10
Once the cheesecake is set, it’s time to remove it from the pan. Gently warm the sides of the cake pan by wrapping it with a towel dipped in hot water for a minute or two. This will help loosen the cheesecake from the pan. Carefully release the sides of the pan.
