Ingredients

  • 400g Pasta (Spaghetti or Linguine recommended)
  • 2 Tbsp Salt (for boiling pasta)
  • 18 cloves Garlic, thinly sliced
  • 8g Peperoncino (or 2-3 dried chili peppers)
  • 4 Tbsp Minced Garlic
  • 400g Frozen Seafood Mix (shrimp, squid, mussels, etc.)
  • 1 Tbsp Black Pepper (for seasoning seafood)
  • 1 Tbsp Fresh Parsley, chopped (for garnish)

Cooking Instructions

Step 1

First, peel all 18 cloves of garlic and slice them thinly. The thinner you slice the garlic, the more flavor will infuse into the oil.

Rinse the frozen seafood mix under cold water to thaw, then drain any excess water. Sprinkle with 1 Tbsp black pepper for a light seasoning. This helps to remove any fishy odor and enhance the flavor.

Fill a deep pot with plenty of water and bring it to a rolling boil with 2 Tbsp of salt. Once the water is boiling, add the pasta and cook for about 7 minutes, which is 1 minute less than the package instructions. Reserve about 1 cup of the pasta water before draining.

Pour about 500mL of olive oil into a wide frying pan. Add the sliced garlic, peperoncino, and minced garlic. Cook over medium-low heat, stirring gently. It’s crucial to slowly cook the garlic until it’s golden brown and fragrant without burning it.

Once the sliced garlic is beautifully golden, add the seasoned seafood mix and stir-fry over high heat. Be careful not to overcook the seafood, as it can become tough; cook just until it changes color.

When the seafood is fully cooked, add the drained pasta and about 1 cup of the reserved pasta water to the frying pan. Stir-fry everything together so that all ingredients are well combined. The pasta water acts as a binder, emulsifying the sauce and adding moisture and depth of flavor.

Once the pasta is coated with the olive oil and sauce, appearing moist and glossy, turn off the heat. Transfer the finished Alio Olio pasta to a warm plate, arranging it attractively. Sprinkle with fresh chopped parsley to finish. Enjoy this delightful pasta with a touch of romance!
