Roasted Mushroom and Vegetable Salad

When you think of salad, fresh greens often come to mind, but today we’re making a delicious roasted vegetable salad! We’re featuring the delightful Baekseon oyster mushrooms for an extra layer of flavor and texture. This salad offers a wonderfully warm and savory profile that’s a delightful change from your usual.
Salad Ingredients
- 1/2 eggplant, sliced into 1cm thick rounds
- 1/2 zucchini, sliced into 1cm thick rounds
- 10 cherry tomatoes, halved (optional)
- A handful of Baekseon oyster mushrooms, trimmed and separated
- Pinch of salt (for seasoning vegetables)
- Pinch of black pepper (for seasoning vegetables)
- 2 string cheese sticks, cut or pulled into bite-sized pieces
- 1 Tbsp olive oil (for roasting)
- 1 Tbsp balsamic vinegar (for dressing)
Cooking Instructions
Step 1
Slice the eggplant and zucchini into approximately 1cm thick rounds. Sprinkle a pinch of salt over the sliced vegetables to draw out some moisture and season them. This step helps the vegetables roast better and improves their texture.
Step 2
Prepare the Baekseon oyster mushrooms by lightly rinsing them under running water, patting them dry, and then separating them into bite-sized pieces. Roasting mushrooms intensifies their flavor beautifully, so be sure to include them!
Step 3
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the prepared vegetables (eggplant, zucchini, oyster mushrooms) and cherry tomatoes. Roast them, turning occasionally, until they are nicely browned and tender. Ensure each side gets a good sear.
Step 4
Aim to get some lovely grill marks on the vegetables; this makes the salad visually appealing and even more appetizing! Keep an eye on the heat to prevent burning, ensuring the vegetables are cooked through and remain moist inside.
