Main Ingredients- 200g Pork Neck, cut into bite-sized pieces
- 2 Small Onions, diced
- 1 Tbsp Cooking Oil
- 1/2 Carrot, diced
- 2 Medium Potatoes, diced and rinsed briefly in water, then drained
- 3 Cups (approx. 600ml) Pureed Tomatoes
- 80g Curry Powder (1 packet)
Cooking Instructions
Step 1
First, heat 1 Tbsp of cooking oil in a deep pot. Add the 200g of pork neck, cut into bite-sized pieces, and stir-fry. Add the 2 small onions, diced, and sauté together until the onions turn translucent.
Step 2
Once the pork is fully cooked, add the 1/2 carrot, diced, and the 2 medium potatoes, diced, rinsed in cold water, and drained. Stir-fry until the vegetables are tender. Once the potatoes are slightly cooked and soft, proceed to the next step.
Step 3
Now it’s time for the tomatoes. Remove the stems from 3 medium tomatoes, wash them thoroughly, and blend them in a blender until smooth. Prepare about 3 cups (600ml) of tomato puree. Pureeing the tomatoes this way allows you to make a moist and rich curry without adding extra water.
Step 4
Pour the smooth tomato puree into the pot with the sautéed ingredients. Use a spatula or spoon to stir everything together thoroughly and bring it to a simmer. Let it cook gently so the tomato flavor melds with the ingredients.
Step 5
Once the mixture comes to a rolling boil, add the 80g packet of curry powder. It’s crucial to stir continuously to dissolve the curry powder completely, ensuring there are no lumps. Continue to simmer over low heat, stirring occasionally, until the curry reaches your desired consistency. Your delicious tomato curry is now complete!
