  • 1 piece Mentaiko (spicy cod roe)

First, bring a large pot of water to a rolling boil. Add a generous pinch of salt. Once boiling, add the spaghetti and cook for approximately 8 minutes, or about 1 minute less than the package instructions. Cooking it slightly ‘al dente’ is key to maintaining a pleasant texture.

While the pasta is cooking, thinly slice the garlic and finely shred the onion. Heat 1 tablespoon of olive oil in a pan over medium-low heat. Add the sliced garlic and sauté gently until fragrant and lightly golden. Be careful not to burn the garlic, as this develops a beautiful aroma.

Once the garlic is fragrant, add the shredded onion to the pan. Increase the heat to medium and sauté until the onions become translucent and sweet. This step is crucial for bringing out the natural sweetness of the onions.
