Today, I’m bringing you a recipe for a rich and savory Gochujang stew! Of course, it must include pork and potatoes, right? I’ll tell you the best way to make it! I’ll even show you how to add rice syrup for an extra special touch!

Main Ingredients

  • 400g pork shoulder or similar cut
  • 1 medium potato
  • 1/4 stalk of green onion
  • 1/2 onion
  • 2 clusters of enoki mushrooms
  • 1 chili pepper (optional, for added spiciness)
  • 1/4 head of napa cabbage
  • 1 Tbsp mirin (rice wine)

Seasoning Paste

  • 75g soy sauce (approx. 5 Tbsp)
  • 100g gochujang (Korean chili paste, approx. 5 Tbsp)
  • 25g minced garlic (approx. 1.5 Tbsp)
  • 60g rice syrup (approx. 4 Tbsp, for sweetness and shine)
  • A pinch of black pepper

Cooking Instructions

1. Prepare the Vegetables: First, wash all your vegetables thoroughly. Slice the onion thinly. Peel the potato and cut it into 1.5cm thick pieces. Chop the napa cabbage into bite-sized pieces. Trim the base of the enoki mushrooms and separate them into strands. Slice the green onion and chili pepper diagonally. (Adding chili peppers will make the stew spicier and more delicious!)

2. Make the Delicious Seasoning Paste: In a stew pot or deep saucepan, combine 75g of soy sauce, 100g of gochujang, 25g of minced garlic, 60g of rice syrup, and a pinch of black pepper. Mix well until there are no lumps. Adding rice syrup not only adds a smooth sweetness but also a beautiful sheen, creating a richer and more refined Gochujang stew. This golden ratio paste is the secret to its amazing flavor!

3. Stir-fry the Pork: Heat your pot over medium heat. Add the 400g of pork shoulder and 1 Tbsp of mirin to remove any gamey smell. Stir-fry the pork until it’s nicely browned and slightly caramelized. Frying the pork until it’s just shy of burning will bring out its deep umami flavor, significantly enhancing the stew’s richness. Don’t be afraid to fry it until it looks slightly scorched!

4. Add Broth and Ingredients: Pour 600ml of water into the pot with the stir-fried pork and bring it to a boil. Once the water is boiling, add the sliced potatoes. The potatoes will absorb the broth as they cook, becoming tender and adding depth to the stew’s flavor.

5. Add Seasoning Paste and Vegetables: Add all the prepared seasoning paste and stir to dissolve. Then, add the chopped napa cabbage, onion, and enoki mushrooms. Bring the stew to a boil over high heat. Once it’s boiling, reduce the heat to medium-low and simmer for about 15 minutes, allowing all the ingredients to cook through and the flavors to meld. Finally, add the diagonally sliced green onion and chili pepper, and simmer for another moment. Your delicious Pork and Potato Gochujang Stew is ready!
