First, carefully check and prepare all the ingredients needed for the recipe. Crack the eggs into a bowl, beat them well, and then cook thin omelets in a pan with plenty of cooking oil until golden brown. Once cooled slightly, slice the egg omelets into your desired size or shape.

Wash the green onion thoroughly and thinly slice it. You can separate the white and green parts; the white parts are great for the soup base, while the green parts make a lovely garnish.

Pour 1 liter of anchovy-kelp broth into a pot and bring it to a rolling boil over high heat. Using broth you’ve made yourself with anchovies and kelp will add a deeper, richer flavor.

Once the broth is boiling vigorously, add all 400g of the sliced rice cakes for soup. Gently separate the rice cakes as you add them to prevent them from sticking together.

Immediately after adding the rice cakes, stir in 2 tablespoons of minced garlic. The garlic will infuse the broth, adding a wonderful savory depth.
