Delicious Beef Seaweed Soup Recipe with Perilla Seeds / Kid-Friendly Soup
Adding perilla seeds to your beef seaweed soup creates a nutty and savory depth of flavor. This soup is incredibly comforting and packed with nutrients, making it a perfect meal for the whole family, especially children.
Main Ingredients- 20g dried seaweed (expands to about 200g when rehydrated)
- 150g beef brisket or soup meat
Seasonings & Broth- 1L anchovy-kelp broth or rice water (or plain water)
- 2 Tbsp tuna extract (or soy sauce for soup)
- 1/2 Tbsp minced garlic
- Salt to adjust taste (or soy sauce)
- 3 Tbsp perilla seed powder (generous amount!)
- 2 Tbsp perilla oil
- Pinch of black pepper (optional)
Beef Marination- 1/3 tsp salt
- 1/3 tsp minced garlic (or garlic powder)
- 1/3 tsp black pepper
- 1L anchovy-kelp broth or rice water (or plain water)
- 2 Tbsp tuna extract (or soy sauce for soup)
- 1/2 Tbsp minced garlic
- Salt to adjust taste (or soy sauce)
- 3 Tbsp perilla seed powder (generous amount!)
- 2 Tbsp perilla oil
- Pinch of black pepper (optional)

Cooking Instructions
Step 1
First, soak the dried seaweed in cold water for about 20 minutes until fully rehydrated. Rinse the rehydrated seaweed thoroughly under running water to remove any grit and excess salt. Squeeze out excess water and cut it into bite-sized pieces, about 3-4cm long.
Step 2
Gently pat the beef dry with paper towels to remove excess moisture. In a bowl, combine the beef with the marination ingredients: 1/3 tsp salt, 1/3 tsp minced garlic, and 1/3 tsp black pepper. Mix well and let it marinate for at least 10 minutes. This step helps tenderize the beef and removes any gamey odors.
Step 3
Now, let’s start sautéing. Heat 2 Tbsp of perilla oil in a pot over medium-low heat. Add 1/2 Tbsp of minced garlic and sauté until fragrant, allowing the garlic aroma to infuse the oil. Be careful not to burn the garlic.
Step 4
Add the marinated beef to the pot and stir-fry over medium heat until about two-thirds of the beef is cooked and turns brown. Then, add the prepared seaweed and continue to stir-fry together with the beef. The seaweed will become more fragrant as it cooks in the perilla oil.

Pour in 1L of broth (or water) into the pot. Bring it to a boil over high heat, then reduce the heat to medium-low. Cover the pot and let it simmer for at least 20 minutes, or until the seaweed and beef are tender and well-cooked. Simmering longer will deepen the flavor of the soup.
Step 6
Once the seaweed and beef are tender, stir in 3 Tbsp of perilla seed powder – this is key for the rich, nutty flavor! Add 2 Tbsp of tuna extract (or soy sauce for soup) for basic seasoning. Taste and adjust with salt if needed. Cover the pot again and simmer for another 5 minutes to allow the perilla flavor to fully meld into the soup. A pinch of black pepper at the end enhances the aroma.
