Delicious Vegetable Curry Recipe for the Whole Family 🙂
Homemade curry is always delicious, but caramelizing the onions deeply brings out an exceptional flavor. This recipe makes a wonderful, nutrient-rich curry perfect for kids and a satisfying meal for everyone. Let’s maximize the sweetness and umami of the onions during the cooking process!
Main Ingredients- 1.5 Onions, thinly sliced
- 1/2 Zucchini, sliced into half-moons
- 1 King Oyster Mushroom, sliced into bite-sized pieces
- 1/2 Carrot, sliced into half-moons
- 1 Tbsp Minced Garlic
Broth & Seasoning- 600ml Water
- 4 Curry Blocks (solid type)

Cooking Instructions
Step 1
First, thinly slice 1.5 onions. Heat a pan over medium heat and add the sliced onions. Start sautéing them slowly until they become translucent.
Step 2
As the onions cook, their color will gradually change and a sweet aroma will emerge. During this stage, their moisture evaporates, concentrating their flavor.
Step 3
Once the onions begin to turn a deep brown color, reduce the heat to low. Keep stirring to prevent burning, then add 1 Tbsp of minced garlic. Sauté for about 1 minute until fragrant.
Step 4
Now, add the 1/2 carrot, sliced into half-moons, and stir-fry together. Cook for about 2-3 minutes until the carrots are slightly tender. Once the carrots are partially cooked, add the zucchini and king oyster mushrooms.
Step 5
Continue to stir-fry all the vegetables over medium-low heat for about 5 minutes until they are well combined. Cook until the vegetables are slightly softened and well integrated.
Step 6
Pour in 600ml of water, ensuring all ingredients are submerged. Bring to a boil over high heat and simmer for about 3-5 minutes to cook the vegetables. (If using Queen Induction, set to level 10.)
Step 7
Once the water is boiling and the vegetables are somewhat tender, add the 4 curry blocks. Stir well to dissolve the curry blocks completely, ensuring no clumps remain.
Step 8
Continue simmering for about 5-7 minutes until the curry has dissolved and the sauce has thickened to your desired consistency. It’s important to stir occasionally to prevent sticking to the bottom. Turn off the heat when it reaches your preferred thickness.
Step 9
