I was captivated by the sight of plump, roe-filled spot prawns featured on a travel show showcasing restaurants in Vladivostok! Conveniently, these impressive spot prawns recently appeared on my favorite online grocery platform, so I couldn’t resist purchasing them. My first attempt was a simple garlic butter stir-fry, but this time, I decided to get creative and made a Thai-inspired spot prawn curry stir-fry using ‘Saint Augustine Green Curry’ sauce and curry powder. I absolutely fell in love with the rich curry sauce, and the firm, succulent texture of the spot prawns, bursting with sweet roe, was truly divine.   • Extra Large Spot Prawns 750g (approx. 16 prawns)
  • Frozen Mixed Vegetables 1 cup (e.g., green beans, yellow beans, broccoli)
  • Spicy Curry Powder 3 Tbsp
  • Water 2 cups (or broth)

Cooking Instructions

We’ll be using the ‘Saint Augustine Green Curry Shrimp Stir-fry’ product today. While it’s originally designed for fried rice or as a topping for rice, we’ll focus solely on using its flavorful green curry sauce to create our spot prawn stir-fry. We’ll be omitting the rice from the original product.

The Saint Augustine product includes Indica rice for stir-frying, but for this recipe, we will not be using the rice. Instead, we will exclusively utilize the ‘Saint Augustine Green Curry’ sauce. You’ll find it’s delicious even without the rice.

Here we have approximately 750g of extra-large spot prawns, about 16 in total. These prawns are generously filled with delicious roe, adding a wonderful depth of flavor to our dish.

The ‘Saint Augustine Green Curry Shrimp Stir-fry’ sauce, now thawed from its frozen state, is ready for use. This rich sauce is the secret to our delicious dish, so ensure it’s properly prepared.

After opening the package, rinse the spot prawns under cool running water. As you can see, their size is truly remarkable! What’s even more impressive is the abundance of roe packed into various parts of their bodies. You might notice the shells are quite firm.

While the spot prawns have noticeably large heads, these heads are packed with rich roe and tomalley, contributing significantly to the flavor. The body meat is also thick and succulent, offering a satisfying bite.

Now, let’s begin cooking! First, place the thawed ‘Saint Augustine Green Curry Shrimp Stir-fry’ sauce into a pan over medium heat and bring it to a simmer. You’ll soon smell the fragrant aroma of the sauce.

Once the sauce is simmering, add all the prepared spot prawns. Since spot prawns are quite large and abundant, the sauce might seem a bit sparse initially. Given their size, cook them for a slightly longer duration.

You don’t need to make a separate broth; the natural juices from the spot prawns will infuse the sauce, making it exceptionally flavorful and deep.

To add color and texture to the dish, toss in the frozen mixed vegetables. These typically include green beans, yellow beans, and broccoli, which add nutritional value and a pleasant crunch. Feel free to include other vegetables of your choice.
