I had a lot of ground beef from Costco and decided to make Hayashi Rice! It turned out incredibly delicious and satisfying. This recipe is perfect for using up extra ground beef and creating a hearty, flavorful meal that everyone will love.

Ingredients

  • Hayashi Rice Sauce Mix 160g (store-bought)
  • Ground Beef 300g (Costco recommended!)
  • Water 700ml
  • Onions 3 medium
  • Button Mushrooms 7
  • Napa Kimchi (well-fermented) a small amount, finely chopped
  • Ketchup 2 Tbsp
  • Butter 3 Tbsp
  • Salt to taste

Cooking Instructions

Step 1

Begin by washing all your vegetables thoroughly. Peel the onions and give the button mushrooms a gentle rinse under cold water to remove any dirt.

Prepare the vegetables for cooking. Slice the onions thickly into strips (about 0.5cm wide). Cut the button mushrooms into quarters or sixths. Finely chop the well-fermented kimchi; sautéing kimchi adds a wonderful depth of flavor.

Melt 3 tablespoons of butter in a pan over medium heat. Once the butter is melted, add the thickly sliced onions. Start sautéing them slowly. Cooking the onions well will bring out their natural sweetness.

As the onions become translucent, reduce the heat to low and continue to cook them gently. Stir occasionally to prevent burning. Cook until the onions turn a rich caramel brown color. This step is crucial for developing a deep, complex flavor in the Hayashi Rice.

Once the onions have caramelized beautifully, increase the heat to high and add the 300g of ground beef. Stir-fry the beef until all the pink color has disappeared and its moisture has evaporated. This ensures no gamey smell and a better texture.

When the beef is well-cooked and dry, add the finely chopped kimchi to the pan. Continue to stir-fry for another 1-2 minutes, allowing the kimchi to meld with the beef and add a pleasant tanginess.

After sautéing, pour in 700ml of water and add the sliced button mushrooms. Bring the mixture to a boil. Once boiling, reduce the heat to medium-low and let it simmer for about 20 minutes, allowing the ingredients to soften and the flavors to meld together.

After 20 minutes, stir in the 160g of Hayashi Rice sauce mix and 2 tablespoons of ketchup. Whisk well to ensure the sauce dissolves smoothly without lumps. If the sauce is too thick, gradually add a little more water to reach your desired consistency. Taste and season with salt if needed.
