Ingredients

  • 3 onions (approx. 520g)
  • 15 cloves garlic
  • 250g chicken
  • 1 packet store-bought curry powder
  • 2 Tbsp butter
  • 1 Tbsp cooking oil
  • 1 Tbsp chicken stock
  • 1 Tbsp ketchup
  • 200ml milk
  • 500ml water

Cooking Instructions

First, thinly slice the onions into about 0.3cm thick strips. Then, cut these strips in half.

Thinly slice the whole garlic cloves.

Cut the chicken into bite-sized pieces.

Heat a pan over medium-low heat and add 1 Tbsp of cooking oil and 1 Tbsp of butter. Add the sliced onions and minced garlic. Stir occasionally and sauté for a long time until the onions are deeply softened and caramelized. Be careful not to burn them.

You don’t need to stir constantly, just ensure they don’t burn. The longer you sauté the onions and garlic, the more depth of flavor your curry will have, as the onions lose their shape and become very soft. This step is crucial for deliciousness!

Once the onions are well-sautéed, add the cut chicken and the remaining 1 Tbsp of butter. Sauté until the chicken is just cooked through and the outside turns white.

Pour in 1 cup (200ml) of milk and 500ml of water into the pan with the sautéed ingredients. To determine the liquid amount, start with the water amount indicated on your curry powder packet, add an extra 100ml, and then use 1 cup of milk for the initial liquid, followed by water for the remainder.

For example, if the curry packet suggests 600ml of water, you’ll need a total of 700ml (600ml + 100ml). Use 200ml of milk first, and then add the remaining 500ml as water.

Next, add 1 Tbsp of chicken stock and bring the mixture to a simmer.

Once the liquid is boiling, reduce the heat to low. Gradually add the curry powder, stirring continuously to dissolve any clumps. Let it simmer gently until it reaches your desired consistency.

When the curry has reached your preferred thickness, stir in 1 Tbsp of ketchup for a final touch of flavor. You can also add about a tablespoon of chili powder at this stage for a bit of heat, if you like!
