How to Make Hearty Seolleongtang Rice Cake and Dumpling Soup Using Store-Bought Seolleongtang Broth!

Rice cake soup is one of my absolute favorite dishes, and I make it quite often. Today, instead of making broth from scratch, I’ve used a convenient store-bought Seolleongtang (ox bone broth) to make a simple and delicious rice cake and dumpling soup. The recipe is incredibly straightforward and easy to follow, making it perfect for anyone looking for a quick, comforting meal.

Ingredients
  • 1 serving of rice cake soup slices (tteokguk tteok)
  • 500g store-bought Seolleongtang broth
  • 1 Tbsp minced garlic
  • 0.5 tsp salt (or soy sauce, adjust to taste)
  • 1 handful of chopped green onions
  • Pinch of black pepper
  • Crumbled seaweed (gim-garu)
  • 3 dumplings

Cooking Instructions

Step 1

First, prepare 1 serving of rice cake soup slices. If the rice cakes are stuck together, soak them in cold water for about 10 minutes to soften them slightly. If your rice cakes are already soft, you can skip this step.

Step 2

Pour the 500g of store-bought Seolleongtang broth into a pot. Add 1 tablespoon of minced garlic to the broth. Bring the mixture to a boil over high heat.

Step 3

Once the broth is boiling, add the dumplings. For larger dumplings like the Bibigo brand, 3 dumplings are usually sufficient for one serving, but feel free to adjust the quantity to your preference. Season with about 0.5 teaspoon of salt (or soy sauce). Since store-bought Seolleongtang broth can vary in saltiness, it’s best to start with this amount and add more after tasting.

Step 4

When the dumplings begin to turn translucent and appear cooked, rinse the soaked rice cake slices under water and add them to the pot. Continue to simmer, stirring occasionally to prevent the rice cakes from sticking to the bottom, until the rice cakes are soft and cooked through. This usually takes about 3-5 minutes.

Step 5

Once the rice cakes are fully cooked, it’s time to add the green onions. Slice them thinly on an angle. If you like a bit of spice, you can also add some chopped chili peppers here. Cook for just 30 seconds to 1 minute more over high heat to maintain the crisp texture of the green onions.

Step 6

Ladle the hot Seolleongtang rice cake and dumpling soup into a serving bowl. Sprinkle a pinch of black pepper over the top for added aroma. Finally, generously top with crumbled seaweed (gim-garu) for a delicious finish.

Step 7

Your delicious Seolleongtang rice cake and dumpling soup, made easily with store-bought broth, is now ready! Enjoy this wonderfully comforting and flavorful meal.
