I’m sharing a special Beef Seaweed Soup recipe that I made for my sons’ birthday. Our family loves seaweed soup so much that I used to make it two or three times a week. When the kids were little, they ate it up so well when I made it mild with plenty of beef. But as they grew up and developed more diverse tastes, it’s now a soup we only make for special occasions like birthdays. This time, I tried grating onion into it, following a method I saw online. They say adding onion changes the taste of seaweed soup, so I decided to give it a go. Honestly, I didn’t notice a huge difference in taste myself, but it was an enjoyable new experiment! Ultimately, I concluded that my usual way of making it is perfectly delicious! Enjoy a hearty and flavorful meal with this Beef Seaweed Soup, simmered to perfection for a rich, deep flavor. Main Ingredients

  • 4 cups Beef Brisket (cut into bite-sized pieces)
  • 6 handfuls Dried Natural Seaweed (soaked in cold water)
  • 2L Rice Water (for the soup base)
  • 1 Onion (grated)
  • 15 cloves Garlic (freshly minced)

Seasonings & Condiments

  • 6 Tbsp Tuna Extract (key ingredient for umami)
  • Salt (to taste, adjust as needed)
  • 3 Tbsp Sesame Oil (for a nutty aroma)

Cooking Instructions

Step 1

First, soak the beef brisket in cold water for about 30 minutes to remove any blood. Properly draining the blood ensures a clean broth without any fishy smell.

Step 2

Soak the dried seaweed in cold water for about 20-30 minutes until fully rehydrated. After soaking, rinse it thoroughly by rubbing it between your hands to remove any impurities. Then, cut it into bite-sized pieces with scissors.

Step 3

Heat a pot and add 3 tablespoons of sesame oil. Add the beef brisket, from which the blood has been drained, and stir-fry over medium heat until well browned. Once the surface of the beef is cooked, add the soaked seaweed and stir-fry together until the seaweed wilts. This step adds depth and a savory aroma to the seaweed.

Step 4

Once the beef and seaweed are well stir-fried, pour in 2L of the prepared rice water and bring to a boil over high heat. Once the soup boils, reduce the heat to medium-low, cover the pot, and simmer for at least 20 minutes. The longer it simmers, the richer and deeper the flavor of the beef and seaweed will become.

Step 5

When the broth has sufficiently simmered, add the finely grated onion and 15 minced garlic cloves. Stir well to distribute the sweetness of the onion and the aroma of the garlic throughout the broth. Continue to simmer for another 5-10 minutes until the ingredients are tender.

Step 6

Finally, taste the broth and season it according to your preference. Start by adding 6 tablespoons of tuna extract, and then adjust the saltiness with salt as needed. It’s important not to oversalt. If you desire a deeper umami flavor, feel free to adjust the amount of tuna extract.

Step 7

Once all seasonings are adjusted, turn off the heat. Ladle the hot Beef Seaweed Soup into serving bowls. Serve with rice for a hearty and nutritious meal. Enjoy your delicious meal!
