Feeling the heat and don’t want to cook? This is the perfect season for fresh lettuce and peppers, and this ssamjang (Korean dipping paste) is ideal to pair with them! I’ve made a simple, less-salty, and nutty tuna tofu ssamjang. Adding almond flour, essential for a healthy diet, makes it even more delicious. It’s a fantastic addition to your meals, especially for a light and satisfying diet.

Main Ingredients

  • 1 can (palm-sized) mild tuna
  • 1/2 block firm tofu (for pan-frying)
  • 2 Tbsp almond flour

Seasoning Ingredients

  • 3 Tbsp doenjang (Korean soybean paste, store-bought)
  • 1 tsp gochujang (Korean chili paste)
  • 1 tsp minced garlic
  • 1 tsp allulose (or 1 Tbsp oligo-syrup)
  • 1 tsp sesame oil
  • 1 tsp sesame seeds (ground)

Cooking Instructions

In a large bowl, combine the doenjang, gochujang, and minced garlic. Mixing the seasonings first helps ensure they blend smoothly with the other ingredients later without clumping.

Drain the oil from the canned tuna thoroughly by letting it sit open in a sieve for at least 10 minutes. Add the drained tuna to the bowl. Squeeze out as much water as possible from the firm tofu using paper towels, then mash it and add it to the bowl. Properly draining the tofu is key to achieving the right consistency for the ssamjang.

Add the almond flour for a nutty flavor, along with the remaining seasonings: allulose (or oligo-syrup), sesame oil, and ground sesame seeds. You can adjust the sweetness to your preference by modifying the amount of allulose or oligo-syrup. If you don’t have almond flour, you can substitute it with perilla seed powder or bean powder for a similarly delicious nutty taste!

Now, gently mix all the ingredients together with your hands until well combined. It’s important to mix until everything is evenly incorporated to create a delicious ssamjang sauce.

Your ssamjang is ready! It’s perfectly balanced – not too salty, wonderfully nutty, and delightfully smooth. Serve it generously with fresh lettuce, perilla leaves, cucumber, or any other crisp vegetables you enjoy. It’s also delicious spooned over rice for a quick and flavorful meal.
