Ingredients- 200g cake flour
- 70g unsalted butter
- 70g cream cheese
- 100g granulated sugar
- 1 large egg, room temperature

First, for a delicate texture, sift the 200g of cake flour twice. This helps prevent lumps and ensures the flour incorporates evenly into the dough, resulting in softer cookies.

Measure out 100g of granulated sugar, 2g of salt, and 1g of vanilla extract or essence. Combine these in a small bowl. This mixture will be added later to the creamed butter and cream cheese, so set it aside for now.

Ensure your 70g of unsalted butter and 70g of cream cheese are softened to room temperature. They should be pliable, similar to the consistency of mayonnaise. If you’re short on time, you can gently warm them over a double boiler (bain-marie), but be careful not to melt them completely. Just bring them to a softened state.

Using an electric mixer (handheld or stand mixer), cream together the softened butter and cream cheese until smooth and fluffy. Scrape down the sides of the bowl occasionally to ensure everything is evenly incorporated.

Gradually add the pre-mixed sugar, salt, and vanilla mixture to the butter and cream cheese. Continue beating until the mixture turns a pale ivory color and the sugar granules are mostly dissolved. This step is crucial for achieving a smooth cookie texture.

Test the creaming consistency. When you lift the beater, the mixture should fall in ribbons, and a faint ‘8’ shape should hold for a moment on the surface. This indicates that the sugar has dissolved well and the mixture is smooth.
