Ingredients

  • 200g cake flour
  • 70g unsalted butter
  • 70g cream cheese
  • 100g granulated sugar
  • 1 large egg, room temperature
  • 2g salt
  • 1g vanilla extract or vanilla essence

Cooking Instructions

Step 1

First, for a delicate texture, sift the 200g of cake flour twice. This helps prevent lumps and ensures the flour incorporates evenly into the dough, resulting in softer cookies.

Step 1

Step 2

Measure out 100g of granulated sugar, 2g of salt, and 1g of vanilla extract or essence. Combine these in a small bowl. This mixture will be added later to the creamed butter and cream cheese, so set it aside for now.

Step 2

Step 3

Ensure your 70g of unsalted butter and 70g of cream cheese are softened to room temperature. They should be pliable, similar to the consistency of mayonnaise. If you’re short on time, you can gently warm them over a double boiler (bain-marie), but be careful not to melt them completely. Just bring them to a softened state.

Step 3

Step 4

Using an electric mixer (handheld or stand mixer), cream together the softened butter and cream cheese until smooth and fluffy. Scrape down the sides of the bowl occasionally to ensure everything is evenly incorporated.

Step 4

Step 5

Gradually add the pre-mixed sugar, salt, and vanilla mixture to the butter and cream cheese. Continue beating until the mixture turns a pale ivory color and the sugar granules are mostly dissolved. This step is crucial for achieving a smooth cookie texture.

Step 5

Step 6

Test the creaming consistency. When you lift the beater, the mixture should fall in ribbons, and a faint ‘8’ shape should hold for a moment on the surface. This indicates that the sugar has dissolved well and the mixture is smooth.

Step 6

Step 7

Add the room temperature egg (1 large) to the mixture. Beat on medium speed until the egg is fully incorporated and the mixture is smooth. Avoid overmixing at this stage once the egg is added.

Step 7

Step 8

Continue to whip the mixture until it is completely smooth and well combined with the egg. Ensure there are no streaks of egg yolk or white visible. Proper creaming here contributes to the cookie’s tender texture.

Step 8

Step 9

Add all of the sifted cake flour to the wet ingredients. Use a spatula to gently fold or cut the flour into the dough until just combined. Be careful not to overmix, as this can develop the gluten and make the cookies tough.

Step 9

Step 10

The dough is ready when no dry flour streaks remain and everything is evenly incorporated into a cohesive mass. Stop mixing as soon as the flour is incorporated to maintain a tender cookie.

Step 10

Step 11

Prepare your piping bag. If you have a round piping tip (like a plain round tip), insert it into the bag. If not, you can simply snip off the end of the piping bag in a straight line to create a round opening. Fill the piping bag with the cookie dough.

Step 11

Step 12

Line your baking sheets with parchment paper or silicone baking mats. Pipe the dough onto the prepared baking sheets, starting from the center and working outwards in a circular motion. Leave some space between each cookie as they will spread slightly during baking.

Step 12

Step 13

I used a plain round tip for these cute, round cookies, but feel free to use a star tip for a more decorative look. Get creative with your piping designs!

Step 13

Step 14

Bake in a preheated oven at 175°C (350°F) for 9-10 minutes. Keep an eye on them as oven temperatures can vary. They are done when they are lightly golden brown around the edges.

Step 14

Step 15

The cookies are perfectly baked when they have a beautiful golden-brown color. Rotating the baking sheet halfway through the baking time can help ensure even coloring. Watch closely to prevent burning.

Step 15

Step 16

Carefully remove the hot cookies from the oven and transfer them to a wire rack to cool completely. They will be fragile when warm.

Step 16

Step 17

Voilà! Your delicious cream cheese butter cookies are ready. Package them in pretty bags for a wonderful homemade gift. Share your sweet creations with loved ones!
