This miso soup is simmered generously with fresh, seasonal crabs, offering a depth of flavor that surpasses ordinary miso soup. The essence of the crab elevates the savory notes of the miso, creating a soup reminiscent of a hearty seafood stew. Ingredients

  • 2 fresh crabs
  • Innards from 6 crab carapaces
  • 1200ml anchovy and kelp broth
  • 1 potato
  • 1 onion
  • 1/2 zucchini
  • 1 block (approx. 300g) firm tofu
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 2 shiitake mushrooms
  • 5 Tbsp soybean paste (Doenjang)

Cooking Instructions

First, prepare a flavorful broth. In a pot, bring 1200ml of water to a boil. Once boiling, remove the kelp immediately. Continue to boil the anchovies for about 5 minutes to extract a rich broth, then strain and discard the anchovies. (Tip: Avoid boiling kelp for too long, as it can impart a bitter taste.)

Prepare the vegetables for the soup by dicing them into bite-sized pieces. Cut the potato into 1.5cm cubes. Dice the onion and zucchini into similar-sized pieces. Remove the stems from the shiitake mushrooms and slice them thinly. Slice the Korean green chili peppers diagonally. Cut the tofu into 2cm cubes.

Add the diced potatoes to the prepared broth and simmer for about 3 minutes. Once the potatoes are slightly tender, add the onion, zucchini, shiitake mushrooms, and the prepared crabs to the pot. Dissolve the soybean paste through a sieve into the broth to season. (Tip: Ensure the soybean paste is fully dissolved to achieve a clear and refined soup.)

As the soup begins to boil with the crabs and vegetables, skim off any foam that rises to the surface. This step will result in a clearer and cleaner broth. Continue to simmer over medium heat for approximately 10 minutes, allowing all ingredients to cook through.

Finally, add the cubed tofu and diagonally sliced Korean green chili peppers. Simmer briefly for another minute until the tofu is heated through. Your delicious crab miso soup is now ready! Gently stir to avoid breaking the tofu. Enjoy this hearty soup with a warm bowl of rice!
