  • 90g powdered sugar
  • 1 large egg, at room temperature
  • 180g cake flour (or low-gluten flour)
  • 20g cocoa powder
  • 1g vanilla extract (or a pinch)
  • Almond slices or chopped almonds, for topping (optional)

Add the sifted powdered sugar to the butter in 2-3 additions, mixing gently after each addition. It’s important to mix softly rather than vigorously at first, allowing the powdered sugar to incorporate smoothly into the butter.

Once the powdered sugar is mostly incorporated, add the room temperature egg and vanilla extract. Whisk gently until the mixture becomes light and creamy, being careful to prevent the egg from separating. This is the creaming stage.
