Rich Cheese Cream Spaghetti

Ingredients- 1 cup (200ml) milk
- 1 tablespoon (approx. 10g) all-purpose flour
- 1 tablespoon (approx. 15g) butter
- 1 slice cheddar cheese
- Generous amount of Parmigiano Reggiano cheese (or Grana Padano), to taste
- 1 serving (approx. 80-100g) spaghetti
- 3 cloves garlic (peeled)
- 3 button mushrooms
- Bacon, to taste (approx. 50g)
- Pinch of parsley flakes (for garnish)

Cooking Instructions
Step 1
To make cooking smoother, prepare your ingredients beforehand. Clean and quarter the button mushrooms. Thinly slice the garlic. Cut the bacon into approximately 1cm pieces.

Bring a large pot of generously salted water to a rolling boil. Add the spaghetti and cook for about 8 minutes, or until ‘al dente’ (firm to the bite), which is usually one minute less than the package instructions. Reserve about 1 cup of the pasta water before draining.
Step 3
In a pan over medium heat, melt half of the butter. Add the flour (equal to the butter in quantity) and stir continuously for 1-2 minutes until lightly golden and fragrant, creating a ‘white roux’. Be careful not to burn it.
Step 4
Gradually pour the cold milk into the roux while whisking vigorously or stirring with a spatula to create a smooth sauce without lumps. You might want to add the milk in stages to achieve a good consistency.
Step 5
Once the sauce is smooth, add the sliced cheddar cheese and stir until it melts completely, adding a creamy texture and color to the sauce.

Finally, grate a generous amount of Parmigiano Reggiano cheese into the sauce. Stir until the cheese is fully incorporated. This step will deepen the sauce’s flavor and richness.

Season the completed cream sauce with salt and pepper to taste. Remember to account for the saltiness of the cheeses when adjusting the seasoning. Add more salt or pepper as needed.

In a separate pan, add a little oil or butter over low heat. Sauté the minced garlic until fragrant and lightly golden. Ensure the garlic doesn’t burn.

Add the prepared bacon to the pan and cook until crispy. The bacon will render its fat, adding more flavor to the dish.

Once the bacon is mostly cooked, add the quartered button mushrooms and sauté them along with the bacon until they soften and release their moisture.

Combine the sautéed garlic, bacon, and mushrooms with the cheese cream sauce. Stir gently to ensure all ingredients are well-mixed with the sauce.

Add the drained spaghetti to the sauce pan. Add a little of the reserved pasta water, if needed, and simmer together for 1-2 minutes, allowing the sauce to coat the pasta evenly. The pasta water helps to emulsify the sauce and achieve the perfect consistency.
