As a fellow home baker living alone, I’m sharing a simple and convenient recipe perfect for one. These cheddar scones are incredibly flavorful and easy to make. This recipe yields 6 scones.
Basic Ingredients
- 170g Cake Flour (or all-purpose flour)
- 15g Sugar
- 2 Pinches Salt (approx. 0.5g)
- 5g Baking Powder
- 15g Cheddar Cheese Powder (Yellow Cheese Powder)
- 60g Cold Unsalted Butter, cubed small
- 40ml Cold Milk
- 1 Large Egg, room temperature
Cooking Instructions
Step 1
First, let’s prepare the dry ingredients. In a large bowl, sift together 170g of cake flour, 15g of sugar, 2 pinches of salt, 5g of baking powder, and 15g of yellow cheese powder. Sifting helps to aerate the flour and prevent lumps, ensuring a lighter texture for your scones.
Step 2
Butter is key to a scone’s texture! Add 60g of cold, cubed unsalted butter to the dry ingredients. Using a pastry blender or a scraper, quickly cut the butter into the flour mixture until it resembles coarse crumbs or small peas. Work quickly to keep the butter cold, as this is crucial for creating flaky layers when the scones bake.
Step 3
Next, let’s prepare the wet ingredients. In a small bowl, lightly beat 1 room-temperature egg, then whisk in 40ml of cold milk to create a milk-egg mixture. Ensure everything is well combined.

Gradually add the milk-egg mixture to the flour and butter mixture. Use a spatula or scraper to gently combine the ingredients until a dough just starts to form. Be careful not to overmix; stop as soon as there are no dry flour streaks visible. Overmixing can lead to tough scones.

Shape the dough into a rough ball, wrap it tightly in plastic wrap, or place it in a bowl and cover with plastic wrap. Refrigerate for at least 1 hour. This chilling period allows the gluten to relax and the butter to firm up again, which is essential for achieving a tender and flaky scone.

Once chilled, turn the dough out onto a lightly floured surface. Gently pat or roll it to about 1.5-2cm thickness, then cut into your desired shapes (traditionally wedges or squares).
