This curry rice is a popular dish packed with plenty of colorful vegetables, making it a visually appealing and nutritious choice. It’s a hearty one-bowl meal that’s easy for anyone, young or old, to prepare and enjoy. This recipe features plenty of fresh vegetables and generous amounts of premium Korean beef (Hanwoo) for an exceptionally delicious outcome.
Main Ingredients- Curry powder 100g
- Korean beef (Hanwoo) 200g (sliced)

- Carrot 1/2
- Onions 2
- Zucchini 1/2
- Whole garlic cloves 20 (thinly sliced or minced)
- Butter 1 Tbsp
- Water (enough to cover ingredients)
Cooking Instructions
Step 1
First, prepare the vegetables for your curry rice. Dice the carrots, zucchini, potatoes, and onions into uniform, bite-sized cubes (about 1.5cm). Cutting them evenly ensures they cook at a similar rate.

For a wonderfully tender texture, we’re using thinly sliced Korean beef (Hanwoo) today. Place the sliced beef in a bowl and gently mix it with 2 tablespoons of cooking wine (Cheongju), 2 pinches of salt, and a pinch of sesame seeds. The cooking wine helps tenderize the meat and remove any gamey odors.
Step 3
In a deep pan or pot, melt 1 tablespoon of butter over medium-low heat. Once the butter is melted, add the cubed onions and potatoes. Sauté them until the onions become translucent. This step helps the potatoes absorb the buttery flavor.
Step 4
As the onions start to turn translucent, add the zucchini and carrots. Continue to stir-fry for another 2-3 minutes until the vegetables are slightly softened. This sautéing process enhances the natural sweetness of the vegetables.
Step 5
Once the vegetables are partially cooked, add the marinated beef. Stir-fry everything together until the beef is no longer pink. Make sure to keep stirring to prevent the beef from sticking to the pan.

Now, pour in enough water to generously cover all the ingredients. Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Let it simmer for about 10-15 minutes, or until the potatoes are tender when pierced with a fork. Once the potatoes are cooked, the other vegetables will also be perfectly tender.

After confirming that all ingredients are cooked through, reduce the heat to low. Gradually add the 100g of curry powder, stirring continuously with a spatula or ladle to ensure it dissolves completely and forms a smooth sauce. Stirring constantly over low heat prevents the curry from sticking to the bottom.

Once the curry has thickened to your desired consistency and all the ingredients are well coated, your delicious beef curry rice is ready! Serve generously over warm rice.

Let’s make some crispy garlic chips to enhance the curry’s flavor! Thinly slice or mince the whole garlic cloves. Heat a generous amount of cooking oil or butter in a pan over low heat. Fry the garlic until it’s golden brown and crispy, being careful not to burn it. Constant stirring is key.

Continue to stir and fry the garlic until it’s golden and wonderfully crisp. This process releases the garlic’s rich, nutty aroma, resulting in delicious garlic chips. Remove them from the pan and place them on a paper towel to drain any excess oil.
