Main Ingredients- 200g beef brisket slices (chadolbagi)
- 1/2 Korean zucchini (aehobak)
- 1/2 green onion (daepa)
- 1.5 bundles of oyster mushrooms (neutarri beoseot) (approx. 150g)
- 2 Korean chili peppers (cheongyang gochu)
- 500ml water
- 500ml store-bought beef bone broth (sagol yuksu)
Seasoning (measured with a tablespoon)- 2.5 Tbsp doenjang (fermented soybean paste)

Cooking Instructions
Step 1
For dishes based on doenjang broth, simpler ingredients often lead to a deeper flavor. Green onions and chili peppers are essential. You can choose just two or three other vegetables like mushrooms, zucchini, onions, or potatoes for a delicious result.

Slice the Korean zucchini diagonally into slightly thick strips. Trim the tough bottom ends of the oyster mushrooms and separate them into strands. Finely chop the green onion and Korean chili peppers.
Step 3
Gently press the beef brisket slices with paper towels to remove any excess blood. This helps to eliminate any gamey odor and ensures a cleaner flavor when stir-frying.

Heat a generous pot over medium-high heat and add the beef brisket. Stir-fry until browned. Since beef brisket can release a lot of fat, skim off about two-thirds of the rendered oil before adding water. This prevents the broth from becoming overly greasy.

Once the beef is nicely browned, pour in 500ml of water and 500ml of beef bone broth. Bring to a boil, then skim off any foam that rises to the surface. This will make the broth clearer and more refined.

Add the oyster mushrooms and zucchini to the doenjang broth, along with 1 tablespoon of minced garlic. Simmer for about 2 minutes until the vegetables are tender.

I started boiling the somen noodles in a separate pot around the same time I added the zucchini to the main broth. After boiling for about 2 minutes, I drained them (without rinsing) and added them directly to the hot broth to cook for another minute. This method allows the noodles to absorb the flavorful broth.
