Cooking Instructions
Step 1
First, prepare the beef brisket to enhance the pasta’s flavor. Place the beef brisket slices in a heated pan. Use tongs to gently spread out any rolled pieces and cook until golden brown. It’s important to cook it thoroughly so that the savory fat renders well.

Once the beef brisket is browned and looks appetizing on both sides, add 1 tablespoon of soy sauce and quickly simmer it. The soy sauce will subtly infuse the brisket, adding a savory depth. Remove the simmered beef brisket to a plate and set aside for later.

Now, it’s time to prepare the perilla leaves and garlic that will add aroma to the pasta. Wash the perilla leaves thoroughly, pat them dry, and thinly slice them into strips. Mince or thinly slice the garlic. Preparing the ingredients in advance will allow you to proceed smoothly without any interruptions during cooking.

Let’s start cooking the pasta. In a large pot, bring 1 liter of water to a boil and season it with 1/2 tablespoon of salt. Once the water is boiling vigorously, add 100g of pasta. It’s best to cook it about 1 minute less than the package instructions for al dente texture. I cooked mine for approximately 8 minutes.

Drain the cooked pasta using a colander and set it aside without rinsing. Leaving the starch on the pasta helps it bind better with the oil sauce.

Utilize the same pan used for cooking the beef brisket. Leave any remaining rendered fat in the pan, and add an additional 2 tablespoons of olive oil. Add the sliced garlic and sauté over medium-low heat. Be careful not to burn the garlic; cook until a fragrant aroma is released.

Once the garlic turns golden and releases its fragrant aroma, add the drained pasta to the pan. Toss the pasta gently in the pan to coat it with the oil and mix with the garlic.

Now, let’s create the core of the sauce. Add 1/4 teaspoon of salt (about a pinch) and 2 ladlefuls of the reserved pasta water (approximately 40ml) to the pasta. Adding pasta water helps emulsify the oil and create a moist, smooth texture as it coats the pasta. Swirl the pan or stir with a spatula to combine the oil and pasta water.
Step 9
Continue to gently toss the pasta until the sauce is well incorporated. Add a pinch of black pepper for extra flavor. Finally, add another ladleful of pasta water and quickly stir-fry to ensure the oil and water are fully combined. Your oil pasta is now complete! It looks wonderfully glossy and delicious.

Plate the finished pasta attractively. Arrange the soy-sauce-simmered beef brisket on top and generously garnish with the thinly sliced perilla leaves.
