Rich Beef Bone Broth Tteok-Mandu-Guk (Rice Cake and Dumpling Soup)

I usually make tteok-mandu-guk with anchovy broth, but yesterday a friend gave me some homemade beef bone broth. Since I might not get to enjoy the special occasion beef bone broth gifted for the holiday season, I quickly whipped up this simple tteok-mandu-guk using it. It’s a hearty and comforting soup perfect for any time.

Ingredients

  • Rich beef bone broth 800ml
  • Dumplings 12 pieces
  • Rice cake slices for soup 3 cups
  • Salt 1/2 ~ 1 Tbsp (adjust to taste)
  • A pinch of black pepper
  • Scallions, finely chopped

Cooking Instructions

Prepare the Dumplings: If using store-bought dumplings, choose ones known for their chewy texture and ability to hold their shape. (Tip: Homemade dumplings are also excellent. The ones I use are from a local specialty shop and maintain their form well without falling apart, even when simmered for a long time.)

Prepare the Rice Cakes: Opting for brown rice tteok (rice cake slices) adds a healthy and nutty flavor to your soup. It’s thoughtful to choose good ingredients for family meals. (Tip: Store them in the freezer and use them directly when needed for convenience.)

Simmer the Broth: Pour 800ml of beef bone broth into a pot and bring it to a rolling boil. Once boiling, season with salt to your preference. (Tip: Using rich beef bone broth instead of anchovy broth results in a much deeper and more complex flavor. If you don’t have homemade broth, commercially available ones work well.)

Add the Dumplings: There’s no need to thaw frozen dumplings. Add them directly into the boiling beef bone broth. Adding dumplings will lower the broth’s temperature, so wait for it to return to a boil.

Add Rice Cakes and Cook: Once the dumplings are partially cooked, add the rice cake slices. Continue to simmer over medium heat for about 5 minutes, or until the rice cakes are tender and the dumplings are fully cooked. Be careful not to overcook the rice cakes until they become mushy.

Prepare the Garnish: While the soup is simmering, finely chop the scallions to be used as a garnish.

Final Seasoning: When the rice cakes and dumplings are fully cooked, add a pinch of black pepper for aroma. Taste the broth and add a little more salt if needed to perfectly match your palate. The rich beef bone broth flavor is truly exceptional!
