Cooking Instructions
Step 1
First, soak the 700g of beef for soup in cold water for about 1 hour to remove any blood. Changing the water 2-3 times during this process helps to drain the blood more effectively. You can use any cut of beef suitable for soup, such as brisket, shank, or round. Even pre-sliced beef will benefit from this blood-draining step.
Step 2
Place the blood-drained beef in a pot and add enough water to cover it. Bring to a boil over high heat, then turn off the heat. You’ll notice a yellowish scum rising to the surface – this is residual blood and impurities. Remove the beef and rinse it gently under running water. This initial boiling step, called ‘parboiling’, is crucial for removing any gamey smells from the broth.
Step 3
Return the rinsed beef to a large pot. Add 3L of chicken broth (if using frozen chicken broth, it doesn’t need to be completely thawed). If you don’t have chicken broth, water is a perfectly fine substitute. Once the broth begins to boil, reduce the heat to medium-low. Skim off any foam that rises to the surface. Cover the pot slightly ajar to allow some steam to escape, and let it simmer for about 1 hour, or until the beef is tender.
Step 4
After simmering for approximately 1 hour, check the beef to ensure it is tender. Once it’s soft, remove the beef from the broth and set it aside.
Step 5
Allow the removed beef to cool slightly, then shred it into bite-sized pieces by hand. Shredding the beef will give it a better texture in the soup.
Step 6
Soak the 30g of dried seaweed in cold water for about 30 minutes until fully rehydrated. Rinse the rehydrated seaweed a couple of times in clean water to remove any grit. Squeeze out as much excess water as possible by hand. This step helps prevent the soup from becoming too diluted.
Step 7
If you have some frozen rehydrated natural stone seaweed, feel free to use that as well. Chop the rehydrated seaweed into manageable pieces. Cutting it too long can make it difficult to eat.
Step 8
Now, it’s time to sauté the seaweed. Heat 3 tablespoons of perilla oil in a pot over medium-low heat. Add the rehydrated seaweed and stir-fry for about 3 minutes. The perilla oil will infuse the seaweed with a wonderful nutty aroma and deep flavor.
Step 9
While the seaweed is sautéing, add the sautéed seaweed, shredded beef, and 2 tablespoons of minced garlic to the pot containing the beef broth. The broth should already have a rich and savory base from simmering the beef.
Step 10
Now, let’s season the soup. Add 2 tablespoons of soup soy sauce, 1 tablespoon of fish sauce, and 2 tablespoons of cooking wine. Taste the broth and adjust the seasoning with salt as needed. Using both soy sauce and fish sauce will enhance the umami flavor.
Step 11
Bring the soup back to a simmer over medium-low heat and let it cook for about 20 minutes. The longer seaweed soup simmers, the more the flavors meld together, resulting in a deeper and more delicious taste. Allow it to gently simmer. After 20 minutes, your delicious Beef Seaweed Soup will be ready!
Step 12
Voila! Your Beef and Perilla Oil Seaweed Soup is complete, boasting a rich, deep broth free of any gamey smell. Enjoy a warm bowl on a chilly day – it’s sure to warm both your body and soul. Enjoy your meal!
