- 2 large eggs
- 1/2 teaspoon baking powder
- 1/2 cup vegetable oil (e.g., canola, sunflower)
- 1/4 cup unsweetened almond milk (or regular milk)
- 2 tablespoons pure maple syrup (or honey)
- 1/2 cup walnuts, chopped or whole (generous amount)
- 1 cup chocolate chips or chopped chocolate (generous amount)
Cooking Instructions
Step 1
Gather all your ingredients for the gluten-free banana chocolate loaf. Freshness is key to a delicious bake!
Step 2
Peel the 3 ripe bananas and place them in a mixing bowl. Mash them thoroughly with a fork until smooth and no large lumps remain. Overripe bananas lend more sweetness and flavor.
Step 3
Add the 2 large eggs to the mashed bananas. Whisk everything together with a fork or whisk until well combined and the mixture is smooth.
Step 4
Add the 200g of gluten-free flour to the wet ingredients. It’s best to sift the flour to prevent lumps and ensure an even texture.
Step 5
Add the 1/2 teaspoon of baking powder. This leavening agent will help your loaf rise and become fluffy. You can adjust slightly based on preference.
Step 6
Pour in the 1/2 cup of vegetable oil. Oil contributes significantly to the moistness and tenderness of the loaf.
Step 7
Gradually add the 1/4 cup of unsweetened almond milk while mixing. The milk helps achieve the right batter consistency. (You can substitute with regular milk).
Step 8
Stir in the 2 tablespoons of pure maple syrup for a touch of sweetness and depth of flavor. Honey is also a good alternative; adjust sweetness to your liking.
Step 9
Add a generous 1/2 cup of walnuts. These add a wonderful nutty flavor and delightful crunch. You can chop them or leave them whole for texture.
Step 10
For a rich chocolate experience, generously add 1 cup of chocolate chips or chopped chocolate. More chocolate is always better!
Step 11
Now, mix all the ingredients together with a spatula or whisk until everything is just combined. Be careful not to overmix; a few streaks of flour are okay.
Step 12
Generously grease the inside of your loaf pan with oil or butter. This ensures your banana chocolate loaf will slide out easily after baking.
Step 13
Pour the batter evenly into the prepared loaf pan. Smooth the top surface for an even bake.
Step 14
Decorate the top of the batter with some extra walnuts. This not only looks beautiful but also adds extra crunch to the top crust.
Step 15
Bake in a preheated oven at 180°C (350°F) for approximately 50-60 minutes (1 hour). To check for doneness, insert a toothpick into the center; it should come out clean. Baking times may vary depending on your oven.
Step 16
Enjoy your freshly baked, moist banana chocolate loaf! It’s absolutely delicious with milk or coffee, making it a perfect snack or a light treat. Enjoy your baking!
