- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1 handful Green Onions or Scallions (chopped)
- 1/2 block Firm Tofu (cubed)
- 1/3 Zucchini (sliced or cubed)
- 1/2 Onion (cubed)
- 2 Shiitake Mushrooms (stems removed, sliced)
- 1 handful Thinly Sliced Pork Belly (or thinly sliced beef, pre-portioned for grilling)
Cooking Instructions
Step 1
In your pot (a traditional earthenware pot, ‘ttukbaegi’, is recommended!), combine 1 tablespoon of Doenjang and 1 tablespoon of Ssamjang. Ssamjang adds a wonderful depth and savory complexity.

Pour in 1 and 1/2 bowls of water (approximately 300-350ml) and whisk to dissolve the soybean pastes. Ensure they are well combined.
Step 3
Stir in 1 tablespoon of Gochugaru. This adds a mild kick and beautiful color. Adjust the amount based on your preference for spiciness.

Add the tofu, cut into bite-sized cubes (about 2cm). Adding tofu earlier can make it break apart, so consider adding it a bit later if you prefer firmer pieces.

Bring the stew to a boil over high heat. Once it starts bubbling, add the thinly sliced pork belly (or beef) and let it cook. The fat rendering from the meat will enrich the broth beautifully.
