Perfect for a Homestyle Meal! How to Make Delicious Cheonggukjang Stew
Cheonggukjang stew is a dish that never disappoints! I made it after a long time, and everyone in the family gave it a thumbs up. It’s perfect for mixing with rice and enjoying a hearty meal. Let’s make a flavorful and comforting cheonggukjang stew!
Main Ingredients- 1-2 leaves of ripe kimchi (seeds removed and finely chopped)
- 2 dried shiitake mushrooms (soak in cold water or use directly)
- 1/3 Korean zucchini (diced)
- 1/2 onion (diced)
- 1/2 block of firm tofu (diced)
- 250g cheonggukjang (fermented soybean paste)
Cooking Instructions
Step 1
First, thoroughly remove the seeds from the ripe kimchi and finely chop it into about 1-2cm pieces. If your dried shiitake mushrooms are very dry, it’s best to soak them in cold water beforehand to soften them. However, if they were recently dried, you can use them directly. Today, we’ll be using freshly dried mushrooms.
Step 2
Dice the Korean zucchini into approximately 1.5cm cubes, and chop the onion into similar-sized pieces. In a pot, combine 2 cups of rice water and 1.5 tablespoons of homemade doenjang, stir well to dissolve, and bring to a simmer. Add the piece of dried kelp to enhance the depth of the broth.
Step 3
While the doenjang and kelp are simmering, remove the kelp once it has infused its flavor. Be careful not to boil the kelp for too long, as it can develop a bitter taste. We are currently building the doenjang base for the stew. The cheonggukjang will be added shortly, so please bear with us!
Step 4
Once the broth is gently boiling, add the 250g of cheonggukjang. You can add it as a block or mash it with a spoon. Stir well to ensure the cheonggukjang is evenly distributed. Then, add the diced tofu, 1 tablespoon of minced garlic, and, if desired, the diagonally sliced Korean green chili pepper for a spicy kick. If you enjoy a bit of heat, be sure to add the chili pepper.
Step 5
After adding all the ingredients, let the stew simmer for a little longer until it’s done! Allow it to boil gently for another 2-3 minutes, until the ingredients are tender and the broth has thickened slightly. This delicious cheonggukjang stew is perfect served hot over a bowl of rice!
