How to Make Delicious Beef Seaweed Soup
We’ve made a hearty beef seaweed soup with a savory broth enhanced by anchovy sauce for an extra umami kick! Here’s how to make it deliciously with some special tips.
Main Ingredients- Dried seaweed (miyeok) 7-8g
- Beef for soup (thinly sliced) 100g
Cooking Instructions
Step 1
First, prepare 7-8g of dried seaweed. Soak it in plenty of cold water for about 10 minutes until it’s fully rehydrated. Be careful not to soak it for too long, as it can become slimy.
Step 2
Rinse the rehydrated seaweed in clean water 2-3 times to soften it. Drain it well in a sieve, removing as much excess water as possible. Cutting it into bite-sized pieces will make it easier to eat.
Step 3
Soak the 100g of beef for soup in cold water for about 5 minutes to draw out any blood. Discard the bloody water, then rinse the beef under running water 1-2 more times to completely remove any remaining blood, which helps prevent any gamey odors.

Pat the beef dry thoroughly with paper towels. This step is crucial for bringing out the beef’s rich flavor.
Step 5
Heat 1 Tbsp of sesame oil in a pot over medium-low heat. Add the dried beef and stir with a spatula, breaking it apart as it cooks. Sauté until the beef is evenly browned and cooked through, making sure it doesn’t clump together. The beef should turn opaque.

Once the beef is mostly cooked, add the rehydrated seaweed to the pot. Stir and sauté together for about 1-2 minutes, ensuring the sesame oil is evenly distributed. This helps the seaweed absorb the savory flavors.

After sautéing the beef and seaweed, pour in 700ml of water. Increase the heat to high and bring the soup to a boil. Boiling helps develop a deeper flavor profile.

As soon as the water begins to boil, add 1 Tbsp of soup soy sauce, 1/2 Tbsp of minced garlic, and 2 Tbsp of anchovy sauce for an extra umami boost. The anchovy sauce adds a wonderful depth of flavor to the broth.

Reduce the heat to medium and let the soup simmer for about 15 minutes. You can either cover the pot or leave it partially uncovered. Simmering allows the flavors of the seaweed and beef to meld beautifully into the broth, creating a rich and savory soup.
