I always have several packs of hearty beef bone broth, carefully prepared by my mother, frozen in my freezer. Today, I decided to elevate my usual seaweed soup by incorporating this precious broth. Instead of plain water, using beef bone broth results in a much deeper, richer flavor profile that is both savory and delightfully nutty. It’s a perfect way to add a touch of warmth and comfort, transforming a simple dish into a truly special meal.

Ingredients

  • Beef bone broth
  • Dried seaweed (miyeok)
  • 1 handful of beef for soup
  • 1 Tbsp minced garlic
  • Salt (to taste)
  • 1 Tbsp sesame oil

Cooking Instructions

First, soak the dried seaweed in water for at least 30 minutes until fully rehydrated. If you’re using pre-cut seaweed, simply soak it. If you’re using whole dried seaweed, after soaking, cut it into bite-sized pieces with scissors. Once rehydrated, drain the seaweed well using a sieve.

Heat 1 tablespoon of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until it’s no longer pink and lightly browned. Searing the beef at this stage helps to develop its flavor.

Once the beef is partially cooked, add the drained seaweed to the pot and stir-fry it together with the beef. Now is also the time to add 1 tablespoon of minced garlic. Continue to stir-fry for another 1-2 minutes, allowing the flavors to meld.

After stir-frying the ingredients, pour in the beef bone broth. Bring the soup to a boil over medium-high heat. Once it starts boiling, reduce the heat to medium-low, cover the pot, and let it simmer gently for at least 20 minutes. Simmering for a sufficient amount of time is crucial for developing a deep, delicious flavor. The amount of seaweed and beef bone broth can be adjusted according to your preference; there isn’t a strict ratio, so feel free to add more if needed.

Once the soup has simmered and developed a rich, savory aroma, it’s time to season it. Taste the broth and add salt as needed to achieve a clean and balanced flavor. While you could use other seasonings like salted shrimp or soy sauce, using salt here will best complement the savory notes of the beef bone broth.
