Beef and Seaweed Soup Ingredients
  • Beef (for soup) 325g
  • Dried seaweed 50g
  • 1 Tbsp minced garlic
  • 1 medium onion, thinly sliced
  • 1L beef bone broth (sa-gol guk)
  • 2 Tbsp anchovy sauce (dashima myeolchi aekjeot)

Cooking Instructions

Step 1

First, place the 50g of dried seaweed in a large bowl and soak it in cold water for about 5 minutes until softened. This helps to rinse off any excess saltiness.

Step 2

Add the 325g of beef to a wok or pot. Using beef cuts with less fat for soup will result in a cleaner broth flavor.

Step 3

Add 1 tablespoon of minced garlic to the beef to enhance the savory aroma and depth of flavor.

Thinly slice 1 medium onion and add it to the pot with the beef. The onions will caramelize as they cook, releasing their natural sweetness and enriching the soup’s flavor.

Cut the beef into bite-sized pieces for easy eating. Avoid cutting them too small, as they might disintegrate during simmering.

Once the seaweed has rehydrated, trim it into manageable pieces, about 3-4cm in length. This makes it easier to eat.
