Ingredients- 1 large fresh egg
- 75g light brown sugar
- 45g all-purpose flour
- 1/2 tsp baking powder
- 1 pinch salt
- 110g dark couverture chocolate, finely chopped
- 25g unsalted butter
- 1 tsp vanilla extract
Cooking Instructions
Step 1
In a large bowl, combine the egg, light brown sugar, and salt. Whisk until the mixture turns pale yellow and the sugar is completely dissolved – this ensures a better texture. Stir in the vanilla extract.
Step 2
Place the chopped dark couverture chocolate and unsalted butter in a heatproof bowl set over a saucepan of simmering water (double boiler). Stir gently until both are smoothly melted. Gradually pour the melted chocolate mixture into the whisked egg mixture, folding carefully to combine without deflating the eggs.
Step 3
Sift the all-purpose flour and baking powder together into a separate bowl. Sifting twice will ensure a lighter texture and prevent lumps in your cookie dough.
Step 4
Gently fold the sifted dry ingredients into the chocolate mixture using a spatula until just combined, being careful not to overmix. Overmixing can lead to tough cookies. Cover the dough with plastic wrap or place it in an airtight container and chill in the refrigerator for 30 minutes to 1 hour. This resting period helps develop the flavor and texture.
Step 5
Once chilled, scoop portions of the dough onto a baking sheet lined with parchment paper, leaving some space between them. Bake in a preheated oven at 175°C (350°F) for about 10 minutes. The edges should be set, but the center should still look slightly soft and fudgy.
Step 6
Remove the baking sheet from the oven and let the brownie cookies cool on the sheet for a few minutes. This allows them to set slightly before moving, preventing them from breaking.
Step 7
Carefully transfer the cookies to a wire rack to cool completely. They will firm up as they cool, achieving that perfect fudgy texture and intense chocolate flavor. Enjoy your delicious homemade fudgy brownie cookies!
